I have 10 different ones in my kitchen now! 

I have high blood pressure and ALL of @daksspices are salt free!

My dinner last night:

1 large chicken breast, cut in half since it was thick. Seasoned with @daksspices blackened seasoning. 

Cook for 4 minutes a side - add your favorite bbq sauce. Serve as a sandwich with a brioche bun, cut up and add to a wrap or salad. Serve with rice, black beans and avocado, use for tacos - lots of choices!

Here are some of my favorite blends:

🌀Super Greek - best used on fish, seafood, hamburgers, meatballs, potatoes, quiona, tomatoes, gyros and kabobs.

🌀Lemon pep - best used on chicken, tofu, veggies, rice and potatoes.

🌀Street taco - best used on ground beef, chicken, pork, steak, shrimp, fish, tacos, fajitas, refried beans, rice and eggs.

🌀Asian zing - best on fish, shrimp, fried rice, chicken wings, tuna steaks and veggies.

🌀Original Red - best used on chicken, burgers, seafood, corn, eggs, salad, popcorn, potatoes, mac and cheese, cheese grits and grilled cheese 🤩

For my @ww friends- my chicken was 3 points (just had to count for the bbq sauce). (I ate one of the chicken breasts 😍)

He cut up green beans into tiny pieces- and I've never had them that way before.  So good!!

I cut up 1 cup of green beans and sautéed those in a pan with 1/2 tsp. sesame oil, salt and pepper.  Cook over high heat - stirring often for 3-4 minutes.

Remove pan from skillet.

Next ingredients:
2 oz. ground beef
1.5 cups frozen riced cauliflower 
1/2 cup frozen brown rice
1 tablespoon hoisin sauce
1 tablespoon soy sauce 
1 tsp. chili crisp

Brown the ground beef, add the frozen cauliflower and rice, cook for 5 minutes.

Add the green beans back into the pan, the soy sauce, hoisin and chili crisp.  Stir to combine.

This was a huge bowl of food and so delicious! Definitely cutting my green beans like that again.

For my @ww friends- this bowl for me was 8 points.

    Waffle Party! 🎉🎉🎉 I made a batch of mini Waffle Party! 🎉🎉🎉

I made a batch of mini waffles to keep in the freezer for an easy breakfast - my future self will thank me! 

I used a mini dash waffle maker - and got 11 waffles out of my recipe.

The recipe is inspired by @pb2foods - I adjusted it somewhat and they came out great!

Ingredients:

1 1/2 cups all purpose flour
1/8 cup cocoa powder
4 tablespoons @PB2 peanut butter powder
1 tsp. baking soda
1 1/2 tsp. baking powder
1 tablespoon Splenda for baking
Dash of salt
1 single serve container of @siggisdairy plain yogurt
2 large eggs
1/4 cup oil (I used Canola)
6 oz. water
1 tsp. vanilla extract
2 tablespoon chia seeds
1/4 cup @lilys_sweets sugar free chocolate chips

In a large bowl, add the dry ingredients, mix well. Add the wet ingredients and stir until combined - try not to overstir. Let the batter sit for 15 minutes.

Spray your mini dash with cooking spray, add a little less than 1/4 cup of the batter. Cook until the blue light turns off. If you try to lift the top of the waffle maker and the waffle sticks - it's not ready - shut the lid and cook longer - they will come out without sticking. 

For my @ww friends - each waffle is 4 points - 7 points for 2.

    Hooray the weekend is here - the perfect time to t Hooray the weekend is here - the perfect time to try my pancake bake!

Great news for my @ww friends - this recipe makes 6 servings at 3 points - OR if you make it 4 servings- 5 points 🎉

I used @hungryjack light and fluffy pancake mix - so this comes together very easily.

Makes 6 servings:

1 banana, mashed
1 single serving fat free yogurt - I use @siggisdairy 
2 scoops vanilla protein powder (I used @ollywellness )
1 egg
1/2 tsp. cinnamon 
2 tablespoons chia seeds
2/3 cup @hungryjack pancake mix
1 serving @lilys_sweets chocolate chips
1/2 cup unsweetened almond milk

Mix all ingredients in a bowl.  Transfer to an 9x13 pan or 8x8 browie pan (the brownie pan will be thicker slices).

Bake at 400 degrees for 20-24 minutes.

This is great to meal prep breakfasts - you can definitely freeze these as well.

To re-heat - I just put it in the microwave for one minute.

    Air fried tofu and @bibigousa mini wontons with br Air fried tofu and @bibigousa mini wontons with broccoli with a yummy hoisin peanut sauce.

Serves 1 - 8 points on @ww for the whole bowl.

Ingredients:

13 @bibigousa mini wontons 
3 oz. firm tofu, cut into cubes
Handful of fresh broccoli 

For the sauce:
1 tablespoons hoisin sauce 
2 tablespoons water
1 tablespoon @pb2foods peanut butter powder 
salt, pepper, crushed red pepper flakes
Stir well.

I added salt and pepper to the tofu cubes.  Add the tofu and mini wontons to an air fryer.  Cook for 10 minutes at 400 - stirring the air fryer basket occasionally.  Add the broccoli and cook 2-3 more minutes.

Add to a bowl - add the hoisin peanut sauce and stir to combine.

    Quick meal idea! Even for breakfast 🎉 Chicken, Quick meal idea! Even for breakfast 🎉

Chicken, black bean hummus and cheese pinwheels 

Serves 1 - 7 points on @ww 

One @olemex_labanderita low carb tortilla 
2 tablespoons @lantanafoods black bean hummus
1 @thelaughingcowusa cheese wedge
1/3 cup shredded mozzarella cheese
2 oz. cooked chicken breast, chopped

Instructions:

Spread the black bean hummus and laughing cow cheese all over the tortilla.

Add the chopped chicken, and mozzarella cheese.  Roll tightly, cut about an inch apart into pinwheels.

Place the pinwheels in the air fryer - air fry for 6-7 minutes.  Serve with salsa for dipping.

I added grapes and asparagus 🎉🎉

Fried eggs on English Muffins with sautéed asparagus and blueberries 🎉

This breakfast takes about 5 minutes to make.

Ingredients:

1 Thomas brand light multigrain English muffin
2 eggs
2 tablespoons @lantanafoods black bean hummus
2 eggs
Handful of asparagus 
Fresh blueberries 
1/4 cup mixed greens 

Toast the English muffin.  While that is toasting, fry 2 eggs in a small skillet (I like my yolk cooked through).

Spread one tablespoon of the black bean hummus on each half of the English muffin.  Add one cooked egg on each side.

In the same skillet, add the asparagus- season with salt and pepper, and sauté for a few minutes.

Top with chopped mixed greens and hot sauce. (I used Trader Joe's green dragon sauce).

INGREDIENTS⁠ FOR BLACKENED CHICKEN (4 SERVINGS)⁠

1 pound boneless skinless chicken breast⁠
1 tsp. paprika⁠
1/4 tsp. salt⁠
1/4 tsp. cayenne pepper⁠
1/4 tsp. dried thyme⁠
1/2 tsp. dried basil⁠
1/2 tsp. dried oregano⁠
1/2 tsp. ground pepper⁠
1/4 tsp. onion powder⁠
1/2 tsp. garlic powder⁠
⁠
INSTRUCTIONS⁠ ⁠
⁠
In a jar add all the spices and shake well. This recipe for blackened seasoning is for 4 chicken breasts. Double or Triple the recipe to have more on hand for next time!⁠
⁠
Flatten each chicken breast so they are the same height.⁠
Sprinkle the blackened seasoning on both sides of each chicken breast.⁠
⁠
In a large skillet add 1 tablespoon olive oil and heat pan for 1-2 minutes.⁠
⁠
Add the chicken – and cook on one side for 4 minutes – DO NOT MOVE! This gives you a great sear on the outside.⁠ Flip and cook 4-5 minutes longer – or until 165 degrees.⁠
Let rest for 10 minutes.⁠

Use 1 chicken breast (at room temperature)⁠

I used a round cake pan (could also use an 8x8 pan too)⁠
⁠
Ingredients:⁠

One Joseph's lavash⁠
4 slices turkey cooked bacon⁠
1/2 cup cauliflower rice⁠
3 baby bell peppers⁠
1/4 cup poblano pepper⁠
1/2 cup fresh kale⁠
1 wedge @dubliner cheese⁠
3 eggs⁠
1/2 cup almond milk⁠
1/4 cup shredded cheese(I used a 4 cheese pizza blend)⁠
salt and pepper⁠
1 tsp. dried oregano⁠
⁠
The "crust" was a Joseph's lavash cut in half and laid criss cross on the bottom.⁠
⁠
Then I added one wedge of @kerrygoldusa cheese on top of the lavash.⁠
⁠
Next I added the cooked turkey bacon.⁠
⁠
I put the rest of the ingredients (except the shredded cheese) in a bowl and I used my stick blender to make it smooth.⁠
⁠
Pour the egg mixture over the crust. Add 1/4 shredded cheese on top.⁠
⁠
Bake at 400 for 25 minutes.⁠
⁠
If it still looks soft in the middle- bake for a few more minutes.⁠
⁠
To re-heat:⁠
Microwave 1.5 minutes⁠
Air fry at 400 for 5 minutes⁠
Bake at 400 for 10 minutes⁠
⁠
For serving I added @theguiltlessgarden guacamole 🥑⁠

Inspired by @laurin.mae - she makes a quiche using a @tumaroswraps as the "crust."⁠

    Homemade crunchy chicken tenders. I know I am not Homemade crunchy chicken tenders.  I know I am not alone when I go out to eat - the first thing I look for on the menu is if they have chicken tenders and 9/10 I'm getting that! ⁠

I don't fry food very often - but these are my famous chicken tenders.  They always turn out so great, crispy on the outside - tender on the inside.⁠

If you have a mini dash waffle maker - just spray the waffle maker with cooking spray - crack an egg, add a little cheese and salt and pepper.  Cook for several minutes - or until the light goes off.⁠

In my bowl:  2 egg waffles, fresh kale with @garlicexpressions salad dressing, a handful of blueberries and grapes, and one @amylufoods chicken sausage.⁠

I used to be intimidated about making any kinds of breads using yeast - but it's not that hard!  I have @zoebakes to thank for that - give her a follow -or buy her book "Artisan bread in 5 minutes a Day."⁠

This recipe makes 8 large buns - or I make it 16 so they are a little smaller.  Great for sandwiches, burgers, breakfast sandwiches.⁠
⁠
For my @ww friends - each one is 4 points (if making 16 out of the dough).⁠
⁠
2 packets of yeast⁠
1 3/4 cups warm water⁠
4.5 cups all purpose flour⁠
1.5 tsp. table salt⁠
1/8 cups sugar⁠
Sea salt for sprinkling on top before baking⁠
⁠
In a mixer, add the flour and warm water and yeast. Let stand for 5 minutes. Add the salt and sugar and using your dough hook, mix for about 5 minutes.⁠
⁠
Lightly oil the dough and cover with a towel. Let rise for 1 hour. When I came back the dough was almost outside the bowl!⁠
⁠
Punch down the dough and take it out of the mixing bowl. I just kind of formed it into a big ball. Cut it in half to make 4 pieces, then kept cutting the dough pieces in half until you have 16.⁠
⁠
Form each of those pieces into a ball shape and place on a cookie sheet coated with cooking spray.⁠
⁠
To get a nice browned crust. Take 1/2 cup baking soda and 2 cups of water. Heat on medium heat in a small pan until the baking soda dissolves. Using a pastry brush, brush the tops of the rolls with the baking powder water and then sprinkle with sea salt.⁠
⁠
Bake at 400 degrees for about 10-12 minutes until nice and browned on top.⁠
⁠

5 oz. taco meat made with 90% lean ground beef⁠
1/4 cup red cabbage chopped⁠
1/8 cup cheddar cheese shredded⁠
1/4 cup diced avocado⁠
fresh cilantro⁠
hot sauce⁠
banana peppers⁠
6 baby bell peppers, cut in half, seeds removed⁠
⁠
INSTRUCTIONS⁠
⁠
Cut each baby bell pepper in half and remove the seeds.⁠
Heat the taco meat and divide between the baby bell peppers.⁠
Add the cheese, and microwave for 30 seconds to melt the cheese.⁠
Add the toppings, I used red cabbage, avocado, cilantro, hot sauce, banana peppers.⁠

    Let's talk gardening! Now that spring is here - m Let's talk gardening!  Now that spring is here - many of us may be thinking about growing some vegetables.⁠

This summer will be my 6th year of having a garden -  I have had varying degrees of successes! LOL⁠

The photo is of these amazing tomatoes I grew 3 years ago called Midnight Snacker Cherry Tomato - how gorgeous are they?? You know when they are ready to pick because the greenish part turns red. ⁠

Midnight Snack is a unique indigo-type cherry tomato that ripens to red with a beautiful glossy black-purple overlay when exposed to sunlight. This coloration comes from the accumulation of anthocyanin pigments, the same reason blueberries are blue and contain healthy antioxidants.⁠

This year I plan to do tomatoes, bell peppers, basil, and lots of varieties of peppers. ⁠

    If you haven’t tried tofu in a while, or think i If you haven’t tried tofu in a while, or think it’s a food that you would never eat – I invite you to try again. For the years I never would go near tofu because of my perception it was gross and something I wouldn’t want to eat.  Now I love it!⁠

Today I can’t wait to show you my recipe on how to cook tofu in an air fryer!⁠
⁠
1 block tofu – pressed for at least 30 minutes* (16 oz. package)⁠
1 tsp. olive oil⁠
1 tsp. garlic powder⁠
1/2 tsp. onion powder⁠
1 tsp. paprika⁠
1/2 tsp. sea salt⁠
1/2 tsp. black pepper⁠
1 tbsp corn starch⁠
⁠
INSTRUCTIONS⁠
⁠
After the tofu is pressed – cut it into cubes.⁠
Add the tofu to a bowl, add the olive oil and shake to coat.⁠
⁠
Next add the spices and corn starch and stir well to coat each tofu piece with the seasoning.⁠
⁠
Preheat air fryer at 400 for 5 minutes. Spray the basket with cooking spray. Add the tofu and spray the tops of the tofu with cooking spray.⁠
⁠
Bake for 10 minutes, shaking the basket occossionally.⁠
⁠
I served this with jasmine rice and my favorite stir fry sauce! ⁠

*What is pressed tofu?? Firm tofu comes in a container with liquid.  Drain the liquid from the package.  I place a few paper towels on a plate, add the block of tofu, add more paper towels on top.  Then place something heavy like a pot, to get a lot of the moisture from the tofu. 

You can but tofu presses that can do that too 🤩

I have 10 different ones in my kitchen now! 

I have high blood pressure and ALL of @daksspices are salt free!

My dinner last night:

1 large chicken breast, cut in half since it was thick. Seasoned with @daksspices blackened seasoning. 

Cook for 4 minutes a side - add your favorite bbq sauce. Serve as a sandwich with a brioche bun, cut up and add to a wrap or salad. Serve with rice, black beans and avocado, use for tacos - lots of choices!

Here are some of my favorite blends:

🌀Super Greek - best used on fish, seafood, hamburgers, meatballs, potatoes, quiona, tomatoes, gyros and kabobs.

🌀Lemon pep - best used on chicken, tofu, veggies, rice and potatoes.

🌀Street taco - best used on ground beef, chicken, pork, steak, shrimp, fish, tacos, fajitas, refried beans, rice and eggs.

🌀Asian zing - best on fish, shrimp, fried rice, chicken wings, tuna steaks and veggies.

🌀Original Red - best used on chicken, burgers, seafood, corn, eggs, salad, popcorn, potatoes, mac and cheese, cheese grits and grilled cheese 🤩

For my @ww friends- my chicken was 3 points (just had to count for the bbq sauce). (I ate one of the chicken breasts 😍)

He cut up green beans into tiny pieces- and I've never had them that way before.  So good!!

I cut up 1 cup of green beans and sautéed those in a pan with 1/2 tsp. sesame oil, salt and pepper.  Cook over high heat - stirring often for 3-4 minutes.

Remove pan from skillet.

Next ingredients:
2 oz. ground beef
1.5 cups frozen riced cauliflower 
1/2 cup frozen brown rice
1 tablespoon hoisin sauce
1 tablespoon soy sauce 
1 tsp. chili crisp

Brown the ground beef, add the frozen cauliflower and rice, cook for 5 minutes.

Add the green beans back into the pan, the soy sauce, hoisin and chili crisp.  Stir to combine.

This was a huge bowl of food and so delicious! Definitely cutting my green beans like that again.

For my @ww friends- this bowl for me was 8 points.

    Waffle Party! 🎉🎉🎉 I made a batch of mini Waffle Party! 🎉🎉🎉

I made a batch of mini waffles to keep in the freezer for an easy breakfast - my future self will thank me! 

I used a mini dash waffle maker - and got 11 waffles out of my recipe.

The recipe is inspired by @pb2foods - I adjusted it somewhat and they came out great!

Ingredients:

1 1/2 cups all purpose flour
1/8 cup cocoa powder
4 tablespoons @PB2 peanut butter powder
1 tsp. baking soda
1 1/2 tsp. baking powder
1 tablespoon Splenda for baking
Dash of salt
1 single serve container of @siggisdairy plain yogurt
2 large eggs
1/4 cup oil (I used Canola)
6 oz. water
1 tsp. vanilla extract
2 tablespoon chia seeds
1/4 cup @lilys_sweets sugar free chocolate chips

In a large bowl, add the dry ingredients, mix well. Add the wet ingredients and stir until combined - try not to overstir. Let the batter sit for 15 minutes.

Spray your mini dash with cooking spray, add a little less than 1/4 cup of the batter. Cook until the blue light turns off. If you try to lift the top of the waffle maker and the waffle sticks - it's not ready - shut the lid and cook longer - they will come out without sticking. 

For my @ww friends - each waffle is 4 points - 7 points for 2.

    Hooray the weekend is here - the perfect time to t Hooray the weekend is here - the perfect time to try my pancake bake!

Great news for my @ww friends - this recipe makes 6 servings at 3 points - OR if you make it 4 servings- 5 points 🎉

I used @hungryjack light and fluffy pancake mix - so this comes together very easily.

Makes 6 servings:

1 banana, mashed
1 single serving fat free yogurt - I use @siggisdairy 
2 scoops vanilla protein powder (I used @ollywellness )
1 egg
1/2 tsp. cinnamon 
2 tablespoons chia seeds
2/3 cup @hungryjack pancake mix
1 serving @lilys_sweets chocolate chips
1/2 cup unsweetened almond milk

Mix all ingredients in a bowl.  Transfer to an 9x13 pan or 8x8 browie pan (the brownie pan will be thicker slices).

Bake at 400 degrees for 20-24 minutes.

This is great to meal prep breakfasts - you can definitely freeze these as well.

To re-heat - I just put it in the microwave for one minute.

    Air fried tofu and @bibigousa mini wontons with br Air fried tofu and @bibigousa mini wontons with broccoli with a yummy hoisin peanut sauce.

Serves 1 - 8 points on @ww for the whole bowl.

Ingredients:

13 @bibigousa mini wontons 
3 oz. firm tofu, cut into cubes
Handful of fresh broccoli 

For the sauce:
1 tablespoons hoisin sauce 
2 tablespoons water
1 tablespoon @pb2foods peanut butter powder 
salt, pepper, crushed red pepper flakes
Stir well.

I added salt and pepper to the tofu cubes.  Add the tofu and mini wontons to an air fryer.  Cook for 10 minutes at 400 - stirring the air fryer basket occasionally.  Add the broccoli and cook 2-3 more minutes.

Add to a bowl - add the hoisin peanut sauce and stir to combine.

    Quick meal idea! Even for breakfast 🎉 Chicken, Quick meal idea! Even for breakfast 🎉

Chicken, black bean hummus and cheese pinwheels 

Serves 1 - 7 points on @ww 

One @olemex_labanderita low carb tortilla 
2 tablespoons @lantanafoods black bean hummus
1 @thelaughingcowusa cheese wedge
1/3 cup shredded mozzarella cheese
2 oz. cooked chicken breast, chopped

Instructions:

Spread the black bean hummus and laughing cow cheese all over the tortilla.

Add the chopped chicken, and mozzarella cheese.  Roll tightly, cut about an inch apart into pinwheels.

Place the pinwheels in the air fryer - air fry for 6-7 minutes.  Serve with salsa for dipping.

I added grapes and asparagus 🎉🎉

Fried eggs on English Muffins with sautéed asparagus and blueberries 🎉

This breakfast takes about 5 minutes to make.

Ingredients:

1 Thomas brand light multigrain English muffin
2 eggs
2 tablespoons @lantanafoods black bean hummus
2 eggs
Handful of asparagus 
Fresh blueberries 
1/4 cup mixed greens 

Toast the English muffin.  While that is toasting, fry 2 eggs in a small skillet (I like my yolk cooked through).

Spread one tablespoon of the black bean hummus on each half of the English muffin.  Add one cooked egg on each side.

In the same skillet, add the asparagus- season with salt and pepper, and sauté for a few minutes.

Top with chopped mixed greens and hot sauce. (I used Trader Joe's green dragon sauce).

1 pound boneless skinless chicken breast⁠
1 tsp. paprika⁠
1/4 tsp. salt⁠

1/4 tsp. dried thyme⁠
1/2 tsp. dried basil⁠
1/2 tsp. dried oregano⁠
1/2 tsp. ground pepper⁠
1/4 tsp. onion powder⁠
1/2 tsp. garlic powder⁠

INSTRUCTIONS⁠ ⁠

In a jar add all the spices and shake well. This recipe for blackened seasoning is for 4 chicken breasts. Double or Triple the recipe to have more on hand for next time!⁠

Flatten each chicken breast so they are the same height.⁠
Sprinkle the blackened seasoning on both sides of each chicken breast.⁠
⁠
In a large skillet add 1 tablespoon olive oil and heat pan for 1-2 minutes.⁠
⁠
Add the chicken – and cook on one side for 4 minutes – DO NOT MOVE! This gives you a great sear on the outside.⁠ Flip and cook 4-5 minutes longer – or until 165 degrees.⁠
Let rest for 10 minutes.⁠

Ingredients:⁠

One Joseph's lavash⁠
4 slices turkey cooked bacon⁠
1/2 cup cauliflower rice⁠
3 baby bell peppers⁠
1/4 cup poblano pepper⁠
1/2 cup fresh kale⁠
1 wedge @dubliner cheese⁠
3 eggs⁠
1/2 cup almond milk⁠
1/4 cup shredded cheese(I used a 4 cheese pizza blend)⁠
salt and pepper⁠
1 tsp. dried oregano⁠
⁠
The "crust" was a Joseph's lavash cut in half and laid criss cross on the bottom.⁠
⁠
Then I added one wedge of @kerrygoldusa cheese on top of the lavash.⁠
⁠
Next I added the cooked turkey bacon.⁠
⁠
I put the rest of the ingredients (except the shredded cheese) in a bowl and I used my stick blender to make it smooth.⁠
⁠
Pour the egg mixture over the crust. Add 1/4 shredded cheese on top.⁠
⁠
Bake at 400 for 25 minutes.⁠
⁠
If it still looks soft in the middle- bake for a few more minutes.⁠
⁠
To re-heat:⁠
Microwave 1.5 minutes⁠
Air fry at 400 for 5 minutes⁠
Bake at 400 for 10 minutes⁠

For serving I added @theguiltlessgarden guacamole 🥑⁠

I used to be intimidated about making any kinds of breads using yeast - but it's not that hard!  I have @zoebakes to thank for that - give her a follow -or buy her book "Artisan bread in 5 minutes a Day."⁠

This recipe makes 8 large buns - or I make it 16 so they are a little smaller.  Great for sandwiches, burgers, breakfast sandwiches.⁠
⁠
For my @ww friends - each one is 4 points (if making 16 out of the dough).⁠
⁠
2 packets of yeast⁠
1 3/4 cups warm water⁠
4.5 cups all purpose flour⁠
1.5 tsp. table salt⁠
1/8 cups sugar⁠
Sea salt for sprinkling on top before baking⁠
⁠
In a mixer, add the flour and warm water and yeast. Let stand for 5 minutes. Add the salt and sugar and using your dough hook, mix for about 5 minutes.⁠
⁠
Lightly oil the dough and cover with a towel. Let rise for 1 hour. When I came back the dough was almost outside the bowl!⁠
⁠
Punch down the dough and take it out of the mixing bowl. I just kind of formed it into a big ball. Cut it in half to make 4 pieces, then kept cutting the dough pieces in half until you have 16.⁠
⁠
Form each of those pieces into a ball shape and place on a cookie sheet coated with cooking spray.⁠
⁠
To get a nice browned crust. Take 1/2 cup baking soda and 2 cups of water. Heat on medium heat in a small pan until the baking soda dissolves. Using a pastry brush, brush the tops of the rolls with the baking powder water and then sprinkle with sea salt.⁠
⁠
Bake at 400 degrees for about 10-12 minutes until nice and browned on top.⁠
⁠

This summer will be my 6th year of having a garden -  I have had varying degrees of successes! LOL⁠

The photo is of these amazing tomatoes I grew 3 years ago called Midnight Snacker Cherry Tomato - how gorgeous are they?? You know when they are ready to pick because the greenish part turns red. ⁠

Midnight Snack is a unique indigo-type cherry tomato that ripens to red with a beautiful glossy black-purple overlay when exposed to sunlight. This coloration comes from the accumulation of anthocyanin pigments, the same reason blueberries are blue and contain healthy antioxidants.⁠

This year I plan to do tomatoes, bell peppers, basil, and lots of varieties of peppers. ⁠

    If you haven’t tried tofu in a while, or think i If you haven’t tried tofu in a while, or think it’s a food that you would never eat – I invite you to try again. For the years I never would go near tofu because of my perception it was gross and something I wouldn’t want to eat.  Now I love it!⁠

Today I can’t wait to show you my recipe on how to cook tofu in an air fryer!⁠
⁠
1 block tofu – pressed for at least 30 minutes* (16 oz. package)⁠
1 tsp. olive oil⁠
1 tsp. garlic powder⁠
1/2 tsp. onion powder⁠
1 tsp. paprika⁠
1/2 tsp. sea salt⁠
1/2 tsp. black pepper⁠
1 tbsp corn starch⁠
⁠
INSTRUCTIONS⁠
⁠
After the tofu is pressed – cut it into cubes.⁠
Add the tofu to a bowl, add the olive oil and shake to coat.⁠
⁠
Next add the spices and corn starch and stir well to coat each tofu piece with the seasoning.⁠
⁠
Preheat air fryer at 400 for 5 minutes. Spray the basket with cooking spray. Add the tofu and spray the tops of the tofu with cooking spray.⁠
⁠
Bake for 10 minutes, shaking the basket occossionally.⁠
⁠
I served this with jasmine rice and my favorite stir fry sauce! ⁠
