What I Eat in a Day – Quick and Easy! Today’s eats are all about EASY!! I love to cook, I love cooking from scratch, but some days I just want to just make it easy on myself – and using shortcuts or prepared foods is definitely ok in my book! My first meal was at 10:00 a.m. – that’s when I started to get hungry. One problem, it was during my work day and I had meetings to go to, so easy and quick but filling was on the menu!
Breakfast – What I Eat in a Day
I love Quest Bars – these are MY FAVORITE! They are low in calories, low in sugar, taste like a candy bar – what more could you want? On my WW plan the granola bar is 7 personal points and since I am diabetic, I have to count points for the banana which is 3 personal points. This kept me full until 1:30 p.m!
Lunch – What I Eat in a Day – Copycat panda express!
Lunchtime I was also in a time crunch – so it had to be fast and delicious! I bought another bag of Just Bare Lightly Breaded Chicken nuggets – and threw a serving of that in my air fryer.
As I was cooking the nuggets, I was reminded of one of my favorite lunches I would get when I was working in downtown Chicago before the pandemic – Panda Express Orange Chicken – WITH fried rice on the side! I just checked the WW app and just the orange chicken is 18 personal points – AND the Panda Express Fried rice is 15 personal points – ouch! I didn’t have an orange sauce, but I did have a peanut sauce, so this lunch was done in no time – AND I used a frozen vegetable blend.
In my freezer I found a bag of frozen “asian fusion” vegetables I forgot I bought. The brand is called Tommy’s superfoods and in the bag was broccoli, edamame, cabbage, bell peppers, snap peas, carrots and water chestnuts in a 5 spice seasoning. The whole bag was 2 personal points.
One thing about the vegetables, the instructions were NOT to microwave – to saute in a skillet, so while the chicken nuggets were in the air fryer for 8 minutes, I sauteed the vegetables in a skillet.
Instructions
I air fried the chicken nuggets at 400 for 8-10 minutes. Meanwhile, add the whole bag of frozen vegetables, into a small skillet and cook for 5 minutes. Add 1 tablespoon of the peanut sauce to coat the vegetables. Once the chicken nuggets are cooked, add those to the skillet with 1 more tablespoon of the peanut sauce. My lunch was 10 personal points (2 for the sauce, 2 for the vegetables, and 6 for the chicken nuggets).
Dinner – leftovers for the win!!
I heated up leftovers of my dinner last night – Slumgulion (American Goulash) which is 8 personal points for me.
