Mexican Black Bean Pizza

Mexican Black Bean Pizza

There are a bunch of different ways you can make this.  You can use your own homemade pizza dough, a store bought pizza crust like a Boboli pizza crust, but my favorite is to just use a tostada.  You can buy them right by

Blueberry Muffins – Muffin of the Week!

One of the things I am trying stay away from are processed foods, snacks, diet pop, etc… I think I will feel healthier eating more whole foods.  As a result, I have been researching recipes that incorporate whole grains, fruits and vegetables.  I came across

Healthy Chicken Nuggets

Healthy Chicken Nuggets

My friend Kathy at work gave me a new cookbook called “The Eat Clean Diet Cookbook” by Tosca Reno.  I had never heard of her, so I did some research and learned a lot!  At age 40 she was 70 pounds overweight, not eating great,

Olive Oil Braised Potatoes

Olive Oil Braised Potatoes

I was watching Food TV and they showed a recipe for Olive Oil Braised Potatoes. It was on the show Easy Entertaining with Michael Chiarello.  I did make a few modifications because in his recipe he used 1 cup of olive oil!  I used

Low fat egg nog recipe!

Low fat egg nog recipe!

To me, its not quite the holidays unless there is egg nog involved!  My whole family loves it.  One of the most favorite things we make with egg nog is egg nog milkshakes.  Just take about 1/2 cup egg nog, 1/2 cup low fat

Two Cheese & Artichoke flat bread pizza with side salad

Two Cheese & Artichoke flat bread pizza with side salad

This is a great dinner to make quickly.  I actually used a garlic/herb flat-bread that I bought at Trader Joe’s next to all the sliced breads.  Or you can certainly use a pita bread as your base.  I adapted this recipe from Fitness Magazine.

Home made kit kat bars

Home made kit kat bars

I have been making these for Christmas for about the last 8 years or so.  One day, I was at Walmart, stocking up on flour, sugar, etc… for baking cookies, and I happened upon a huge hunk of chocolate called Almond Bark.  Its chocolate for

Ultra Lite Chocolate Pecan Cookies

Ultra Lite Chocolate Pecan Cookies

I mentioned yesterday that I am in full baking cookie mode for the next week, as I make cookies for the kids teachers, crossing guard, Daisy troop leader, music teachers, etc… Did you ever watch that show, Cooking Thin on the Food TV network?  I don’t think they have it

Beer battered chicken tenders

I mostly cook healthy dinners, but I’ve mentioned before my kids favorite thing that I make is chicken tenders.  I have baked them, put a bread crumb coating, pretzel coating, etc…  The other day when I was driving in the car, I told my oldest

Peanut Butter Smoothie

This recipe is for my brother (www.backtothefridge.com)  who loves peanut butter more than anyone I know.  He can keep a jar at his desk and eat spoonful after spoonful and never get tired of it!  I got this recipe from a Shape Magazine back in

Sloppy Joe’s

Sloppy Joe’s

I make sloppy joe’s for my husband and I at least once a month.  It’s super easy, and I usually just buy ground sirloin beef and a can of Manwhich.  It’s good, don’t get me wrong, but I was wondering if there was a recipe

Chicken Fried Brown Rice

Chicken Fried Brown Rice

Okay, who watched The Biggest Loser last night?  I knew there was going to be voting, and I was hoping Vicky would be in the bottom 2 so that she wouldn’t be in the final three.  Michelle is doing great though, losing 9 pounds in week 12?  That’s insane.  I

No knead oatmeal bread

No knead oatmeal bread

For some reason I have always been afraid to make bread.  I am afraid of the yeast, how do I know if the water is warm enough, did it rise enough, etc…  I once bought yeast, and literally moved it with be through 3

Italian Edamame

Italian Edamame

I have posted roasted edamame, and I love adding edamame in salads and soups, or making a dip out of it.  This is something you can make either as a side dish or a healthy meal.  I also found this from Shape Magazine from 2005.

Black bean burgers

Black bean burgers

There are some things I make that only I will try, and this was for sure one of them!  Maybe if I didn’t say anything about it being made from black beans, my family would try them, but I don’t mind making things only

Wild rice quesadillas

Wild rice quesadillas

I brought this for lunch today, and because I like it so much, it will be my lunch for the next two days too!  I found this recipe from Fitness Magazine. I assembled it at work and put it in the toaster oven.  I think if

Pulled pork sandwiches

Pulled pork sandwiches

My Mom was raised in Virginia, and the way they do pork barbecue is totally different than the midwesterners do. There is no barbecue sauce, its just vinegar and crushed red pepper flakes.  The recipe is super easy, and low maintenance, but worth the time invested.
