Welcome back to another What I Eat in a Day on Weight Watchers. My hope is to give you inspiration as to how I spread out my points throughout the day. I love making great food that tastes awesome and keeps me satisfied.
Breakfast – Protein Oatmeal
This first meal is super easy and takes 2 minutes to make.
In a bowl add 1/2 cup oats, 3/4 cups unsweetened almond milk, 1 scoop of chocolate protein powder (I used Safe & Fair Brand), 1 tablespoon chia seeds, 1 tablespoon hemp seeds. Stir well. Microwave for 1.5 minutes.
Remove from microwave, let stand for 2 minutes. Add a banana and a drizzle of sugar free pancake syrup and a few almonds. This bowl was 11 personal points on my Weight Watcher plan.
Lunch – Taco Soup
The soup I made today I’ve made versions of for over 15 years. The original recipe came from a former co-worker of mine Kathy. She would make it for friends and family and they would ask for the recipe and then I made it, my sister, and we shared it. We joked it was the soup that was sweeping the nation.
I’ve changed it around over the years, basically calling whatever leftover protein I have (chicken, ground beef, plant based beef, ground turkey, vegetables I have on hand and Kettle & Fire Bone broth – you can come up with a delicious soup! Jenn Cooks Taco Soup
Ingredients
- 5 baby new potatoes cut into cubes
- 2 carrots chopped
- 4 celery stalks chopped
- `1/2 small white onion chopped
- 8 shishito peppers diced (optional)
- 1 cup Morningstar Brand Vegetarian Beef Crumbles
- 1/2 cup jarred salsa
- 8 oz can tomato sauce
- 1 container Kettle & Fire Beef Bone Broth (2 cups)
- 2 tsp. chili powder
- 1 tsp. cumin
- 1/2 tsp black pepper
- 1 tsp. olive oil
Instructions
- In a medium pot, add the olive oil. Add the potato, and other vegetables and cook for 5 minutes, stirring occassionally.
- Add the spices and stir. Cook for 2 more minutes.
- Add the Kettle and Fire Bone Broth, the salsa, and tomato sauce.
- Add the morningstar beef crumbles.
- Simmer on low for 20 minutes.

Dinner! Hamburger with French Fries!
My husband and I grilled out burgers over the weekend. So dinner was ready in a flash! I heated up the burgers, added a slice of Sargento Sharp cheddar cheese, brioche bun, pickles, frozen crinkle fries and 2 clementines. My dinner came in at 14 personal points.
