I love shopping Trader Joe’s . I am lucky to have one in my town, but before that I would drive 30 minutes to the closest one to my house. We affectionately call it “Chicken Joe’s” because when my daughter was little- that’s what she called it and to this day I still ask “Who wants to go to Chicken Joe’s with me?” 😂😂😂
I think my favorite part about shopping Trader Joes is the convenience and I can stock up on dinners that are super quick to make during the week.
I bought a box of Chile lime chicken burgers (3 Smart Points if you are following the dubs).
I ended up cooking all 4 patties with the plan to make chicken burgers to bring to my office for lunches.
As I was getting ready to put my lunch together- I saw I had leftover pasta and marinara sauce and I wondered if that would be a good combo. Ummmm… it was!! I gladly ate this 4 lunches in a row and was sad when they were all gone!
I make Star’s zero point marinara. I also use Trader Joe’s light mozzarella.
The points depend on how much pasta you add. I typically add 3 oz. of cooked pasta (3 SP) 3 SP for the chicken patty and 1 SP for the cheese.
