My husband and younger son are out of town on a camping trip field trip with my son’s school, so when I got home from work tonight I was thinking about what to make for myself. I asked my other two kids if they wanted pasta, they said no. They wanted periogies for dinner, which I bought frozen so dinner for them was set. I’m not a huge fan of those, so I was trying to think of what I could make that would be totally deluxe.
I had these lasagna noodles, and I knew I had some more of the ground turkey from my pot stickers I made yesterday, so I knew that would be in my filling too.
Ingredients:
3 sheets of lasagna noodles (these were the no boil kind)
1 cup tomato sauce (to which I added cumin and a little chili powder)
1 TB. taco seasoning
1 oz. Mexican shredded cheese
1/4 onion
handful of broccoli slaw (chopped)
1 clove of garlic chopped
Directions:
I have a small ramekin which I used to layer my lasagna for one. I snapped each lasagna noodle in half, which gave me 6 layers in my lasagna (for only 160 calories!)
In a small skillet, add the onion, garlic and broccoli slaw and saute until tender.
Next add the ground turkey and cook until its cooked through, and then I added the taco seasoning (from a packet) with a tablespoon of water.
This is the cheese I used:
I started layering the ramekin. I put a little sauce on the bottom, a lasagna sheet, some of the turkey mixture, a touch of cheese, and kept going until I was out of lasagna sheets. this is what it looked like before going into the oven:
The directions on the lasagna noodle box recommended you cook it for 50-60 minutes. Since I just made 1 serving of lasagna, I cooked it at 375 covered with aluminum foil for about 40 minutes, and let rest for about 5 minutes.
Since I was cooking this based on ingredients I had, I thought of several ways you could make this even better. You could add black beans, corn, maybe some salsa, you could have used taco sauce instead of the tomato sauce. You could add spinach or shredded zucchini.
This huge portion was 460 calories! And the best part was, I couldn’t even finish it all! I thought it tasted great!
Now to The Biggest Loser last night?? Who watched it?? I have to say I needed a tissue because I was getting a little choked up with them running the marathon. I’ve run 2 marathons so I know how hard it is when you train for 6-8 months, let alone just 26 days! I can’t believe Ron made it, he always quit other challenges the moment they started!
It was really emotional to watch all of the contestants finish such a major feat! It kind of re-ignited my resolve to finish losing the weight I want to. I’ve quit smoking before after smoking for 7 years, run 2 marathons, and several half marathons, and if I can do those things, I can do anything I set my mind to!
So, who do you think is going to win The Biggest Loser??

That is a really good idea…using the taco seasoning. I like the idea of individual portion, so even if I want to eat more there is no more, so I do not over eat. The pictures of the lasagna is very yummie! By the way, I usually get the Israeli couscous at Trader Joes, I know that Whole Food have them as well.

I would have never thought of trying lasagna Mexican style. I am 100% Italian and very biased to my traditional lasagna, but this looks so delicious. I really like the ideas of adding black beans and corn. I use turkey a lot instead of ground sirloin for things, especially when I make tacos. But this looks like a must try – Very festive for Cinco de Mayo I must say!
