Have you ever woken up and decided you don’t really feel like a “breakfasty” kind of meal. No pancakes, no oatmeal, no cereal, I want something different!
So, this is what I made for my breakfast:
1 cup cooked quinoa
sugar snap peas
red onion, diced
1 egg, which I “fried” in Pam cooking spray and chopped up
your favorite stir fry sauce
I cooked the egg first, then chopped and put back into the skillet, add the cooked quinoa and the onion and sugar snap peas and cook for several minutes. Add whatever stir fry sauce you like, and you are ready to go!
*Quinoa takes only 6 minutes in the microwave to cook, so you can easily make this before starting your day.
Doesn’t that look good?! I haven’t figured out the calories yet, but I am assuming its around 375 for this whole skillet!
Do you like to eat “non-breakfast” type foods for breakfast?
Hmm…I’m usually all breakfast kind of girl…unless it starts to creep around 11am or so, then I can turn on to lunch!
I’ve never tried a non-breakfast in the morning…but breakfast for dinner-one of my favorites!
Love this idea! I’m more of a savory breakfast person anyways and I love breakfast for dinner!
My favorite “non-breakfast” food in the world is cold pizza. And no, I don’t have that anymore…but I miss it!
I do sometimes like non-breakfast things for breakfast. But then my fav thing is having breakfast for dinner! : )
Like Shelley, I love cold pizza for breakfast. The quinoa looks good. I just “discovered” that a couple of months ago, that and bulgur. Thanks for another recipe for it.
Usually I stick to oatmeal, but when I have the chance I might have some soup! : )
