I had two misses this week cooking wise. I made a pork tenderloin which I overcooked and it was super tough, and I made banana bread which I was trying to do super healthy, just putting lots of stuff in it, and it came out dense and tough and yucky. I had to throw it out! Then I saw Marc’s recipe for banana bread and I figured it out. I forgot any type of baking soda and I may have mixed the batter too much which will make the final outcome not so good! Here is my newer version, which turned out much better!
- 3 ripe bananas
- 1 egg
- 1 stick butter
- 1 1/2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup ground flax seed
- 1/4 cup chocolate chips
Butter and flour a 9 inch loaf pan, so the bread doesn’t stick. I used Pam cooking spray instead of butter which was just as good. Mix the wet ingredients together, set aside, add the dry ingredients until just moistened. Cook at 350 degrees for about 50 minutes, or until toothpick inserted comes out clean.For 12 slices, each slice is approx. 220 calories, 8 grams of fat and 2 grams of fiber.This time I didn’t have to throw it out!

Yum! Glad your 2nd try was a success. Banana bread is always a winner. We’ll be making a banana bread creation this weekend too so wish us luck!
