Baked French Toast
1 loaf Challa bread (about 1 pound)
8 large eggs
3 cups plain, vanilla or lemon yogurt
2 TB. maple syrup
1/4 cup sugar
1 tsp. salt
1 1/2 tsp. sugar
I am lucky enough to have two bread stores in my town, but Challah bread can also be purchased at the grocery store. It’s traditionally a Jewish bread, that is braided and is slightly sweeter than regular bread. The bread is moist, so it soaks up the wet ingredients perfectly!
This casserole makes 12 servings and each serving is 170 calories, 6 grams of fat and 1 gram of fiber.
Directions:
In a large mixing bowl beat the eggs, yogurt, syrup, sugar, salt and cinnamon. Cut up the bread into cubes and place into the bowl with the wet ingredients.
Make sure to coat all the bread well.
Pour into a 13 x 9 inch pan coated with Pam Cooking Spray. Cover with plastic wrap and refrigerate overnight.
Bake at 350 degrees for about 30 minutes or until golden.
This is a great recipe for lazy weekend mornings, or when you have guests in town, just prep the night before. Feel free to use any other kind of bread that you like!
I used Dannon Fat free vanilla that comes in a big tub, but I’m sure any variety of yogurt will work as well.

what was the texture of this like in the end? i ask because i have tried 2 different baked french toast recipes and both came out more like bread pudding than anything else… everyone involved was disappointed!
I love french toast. I also love your healthy variation. I need more healthy variations to my old favorites to keep things fun. Thanks

Kelly, I hate bread pudding, and this did not fall into that category. I wonder if it turned out that way because their was too much liquid.
This tasted just like it sounds, baked french toast, not baked bread pudding! Maybe it was the type of bread also? Try this and you won’t be dissapointed. Thanks for visiting!
Everyone loves baked toast. And it’s so much better baked. You can do more fun stuff with it.
I’m going to make this soon. You mention cinnamon in the instructions but not in the ingredient list. How much cinnamon do you use?
