I have never made white bean and chicken chili before. I’ve read a ton of recipes over the years but I finally made my version of this great take on chili. The best thing is you can also make this in your crock-pot. If you use the crock-pot method, put 3-4 medium chicken breasts in the bottom of the crock pot, frozen or fresh, and then add all the ingredients on top and cook it all day. When you get home, the chicken will be easy to shred.
White Bean and Chicken Chili
- 1 TB. olive oil
- 1 cup chopped celery
- 1 cup chopped white onion
- 1 cup chopped green pepper
- 4 garlic cloves, chopped
- 1 banana pepper, chopped
- 2 tsp. chili powder
- 2 tsp. ground cumin
- 1 cup corn (from a can or frozen)
- 2 cups chicken broth
- 2 15 oz. cans Great Northern Beans, drained and rinsed
- 1 pound cooked chicken, chopped or shredded.
In a large stock pot add the oil and celery, onion, green pepper, banana pepper and saute on low for about 5 minutes. Add the garlic, chili powder, cumin; saute 1 more minute. Add broth and bring to a boil. Reduce heat and simmer for about 3 more minutes. Add beans, corn, chicken and bring back to a boil, then reduce heat until heated through. You can add salt and pepper to taste. It’s super quick and easy and healthy. Here are the stats:

Very filling and delicious! You can vary it by adding cooked ground turkey, or make it vegetarian by adding more of your favorite veggies.
