I have been reading more and experimenting with Vegan cooking. Not so much for the reasons most people are, but by the way you can cook without using margarine, oil, eggs etc… For those of you who don’t know what being Vegan is, here is a definition from their site www.vegan.org.
what is a VEGAN? A vegan (pronounced VEE-gun) is someone who, for various reasons, chooses to avoid using or consuming animal products. While vegetarians choose not to use flesh foods, vegans also avoid dairy and eggs, as well as fur, leather, wool, down, and cosmetics or chemical products tested on animals.
why VEGAN? Veganism, the natural extension of vegetarianism, is an integral component of a cruelty-free lifestyle. Living vegan provides numerous benefits to animals’ lives, to the environment, and to our own health–through a healthy diet and lifestyle.

Since you pretty much know by now how much I love muffins, I found a recipe for Graham Cracker Muffins which I couldn’t wait to try. The best part is that you use no eggs, or margarine, or butter, or oil for that matter!
- 1/2 cup all purpose flour
- 10 graham cracker sheets (I package) ground or smashed into small pieces
- 1 cup soy milk (I used skim milk)
- 2 1/2 tsp. baking powder
- 1/2 cup sugar
- 2 1/2 TB. ground flax meal mixed with 3 TB warm water(this replaces the egg)
- 4 TB. chocolate chips
In a mixer, mix together the flour, crushed graham crackers, sugar, baking powder. Next add the milk, flax meal mixed with water, and chocolate chips.
This time I decided to make mini muffins from them instead of 6 jumbo muffins. For each mini muffin it is 62 calories, 1.25 grams of fat and .7 grams of fiber. I used a mini muffin tin I bought from Pampered Chef, it makes 24 mini muffins. It was kind of nice just to have a bite of something sweet after a meal! If you choose to make 6 jumbo muffins, then each muffin would be 251 calories, 5 fat and 2.8 fiber.
