The other night was a late eating night. I had gotten home from work, but it was BEAUTIFUL outside, so the kids wanted to ride their bikes. We hung out for a while and when I came in to start dinner, my husband called and I ran to pick him up from his office, then we stopped by the cleaners…long story short, it was 6:50 and I hadn’t even started dinner, and there was still homework and all 3 of my kids needed to take a shower before bed!
I put my Rachel Ray 30 minute meal hat on and got busy!!
I knew I had chicken breast defrosted. I cut those in half to make them thinner. I soaked them in skim milk.
Next, I got a plate, poured sesame seeds on it, and some parmesan cheese and cracked pepper
Once the chicken breasts were all coated, I cooked them in a skillet with a little olive oil exactly 4 minutes per side
Threw 5 potatoes in the microwave
Got bagged salad out, cut up some carrots and red onion for a quick salad
It was actually 25 minutes from start to finish! Rachel Ray would be so proud!!
On my baked potato I added 1 tablespoon of cheese, and on my salad I added Paul Newman’s Light Italian dressing.
***Fast forward to today***
My daughter and I ran errands this morning, I stopped by a local Health food store and finally got Agave Nectar! It’s a lower glyecemic index sweetener, and it tastes really good!

I’m always kicking myself for not cutting my chicken breasts in half to make them thinner when pan cooking them.

I’m a big fan of agave nectar because it has a fairly neutral taste and is great for adding to beverages.
I still have not tried agave nectar. Everyone raves about how amazing it is. Hmm…I will pick a bottle up from the co-op today and give it a shot.
I love quick meals like this and you can never go wrong with anything paremesan. My quick meals mostly consist of a dry rub getting thrown on a chicken breast and tossed in a skillet or a grill.

I bought sesame seeds not too long ago and honestly, I have no idea what to do with them! I’d wanted to make semolina bread but that never happened. This looks like a great way to use some of them up!
The crunch on the chicken looks great – I’ll have to try adding sesame seeds to my usual breading, now!
