I am doing my research paper for my Nutrition class on Veganism and what kinds of foods you can eat. I am not interested in being Vegan per se, but as for the ingenuity of baking in an alternative way, I am intrigued by all the different things you can make and be Vegan too. I went to my local library and got a few books. One of which was called “Vegan with a Vengeance” by Isa Chandra Moskowitz. She has a popular food blog called www.theppk.com. When I was looking through the cook book, this recipe caught my eye. I’ve made roasted chick peas, roasted edamame, why not roasted Brussels sprouts? It may be a stretch for some of you, since like me, Brussels sprouts aren’t at the top of my list, but you never know, right? I’ve tried a lot of new things lately that I have always said I hated, and it turns out I like it! As Isa mentions in the cookbook, “These are amazing! Roasting the Brussels sprouts gives them a popcorn-y flavor. So, if you are game, so am I. Here is what you will need:
- 1 pound Brussels sprouts, washed and halved
- 1 tablespoon olive oil
- 3 cloves of garlic, chopped
- 1/4 tsp. coarse sea salt
Preheat oven to 400 degrees. Lay the Brussels sprouts on a rimmed baking sheet; sprinkle with the oil. Roast for 10 minutes. Remove them from the oven and add the chopped garlic, sprinkle with the salt and toss to coat. Return them to the oven and roast for 5 more minutes. It sounds good to me! Alton Brown says brussel sprouts get a bad reputation b/c most of us grew up eating them boiled and over-cooked. The longer they’re cooked, the more sulfur is released from their high glucosinolates. So shorter cooking time recipes will produce a sweeter tasting sprout.
I’ve never really had a problem with them, even when they’re boiled. I usually half them and put butter salt and pepper. Tastes like any other veggie to me!
