I made a great dinner tonight in no time flat. Since school has started back for my kids, so has all the open houses, and curriculum nights and PTO meetings. Tonight we had two different meetings, and we had to be at school by 6:00 and I wanted everyone to eat dinner beforehand. I got home from work at 5:00 and within 25 minutes, had a great meal.
- 4 boneless skinless chicken breasts, cut into strips
- quinoa (I used 1 1/2 cups quinoa to 3 cups water)
- pea pods
- green beans
- fresh Parmesan cheese
- Lawry’s season salt
- lemon pepper seasoning.
- Trader Joe’s frozen chicken pot-stickers
The chicken was frozen, so I defrosted it in the microwave for about 5 minutes. While that was going on, I got a pan and filled it a few inches with water, and added the snow peas and green beans. I cooked that for about 8 minutes. I bought a box of quinoa at Trader Joe’s over the weekend and I looked on the back to see if I could microwave it, and sure enough, you can. I got a plastic bowl and as soon as the chicken had defrosted, I stuck the quinoa in and cooked, covered in plastic for 4 minutes. After the 4 minutes, you stir and cook another two minutes. Next, I cut the chicken into strips, took out a skillet, coated it with olive oil and sprinkled a little Lawry’s season salt and a little lemon pepper seasoning. I cooked the chicken for about 5-6 minutes, until it was done. Remove the chicken from the pan and next I threw in Chicken pot stickers that came frozen from Trader Joe’s. I sauteed them a few minutes, then added about 1/4 cup of water, covered and let them steam for about 5 minutes. The 5 pot-stickers were 145 calories, the pea-pods were 30 calories, the green beans were about 25 calories, and the quinoa was 127 calories and a few shavings of Parmesan cheese and 2 oz. chicken was 70 calories. Grand total 400 calories!
