Its been a while since I made muffins, so I thought this would be a great way to start out the week. I love pumpkin and especially around Thanksgiving, its such a great thing to add to so many holiday dishes. I am going to make these for Thanksgiving morning, just something light to tide you over until the feast begins! I got this recipe from www.fitnessmagazine.com. They are healthy, and a great way to start the day!
- 1 3/4 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
- 2 large eggs
- 1 cup canned unsweetened pumpkin
- 1 cup chopped dates
- 1/3 cup light brown sugar
- 3 TB. extra-light olive oil.
Heat oven to 425 degrees. Spray a 12 muffin tin with cooking spray, or you can use paper liners.
In a large bowl, add the first 6 ingredients and set aside. In a small bowl, add the eggs, pumpkin, dates, brown sugar and olive oil. Add the wet mixture to the dry ingredients and mix until just moistened. Its okay if the batter looks lumpy.
Bake for 18-20 minutes, or until tops are light golden brown. My oven cooks faster, so mine were done in 15 minutes, so you may want to check them around the 15 minute mark. Cool for about 5 minutes in the pan, then remove and place on a wire rack to cool completely.
Each muffin is only 180 calories, 5 grams fat and 2 grams of fiber.
