Marion’s Kitchen marinades were introduced to me by my twin sister Biz. She kept showing recipes she made using the marinade and I finally got my hands on some. So sorry I waited so long – my lunch was outstanding.
This isn’t really a recipe, but just wanted to share how I sometimes put my lunch together for the work day. I bring food to work for several reasons. One reason of course is the expense. I could easily spend $20+ a day in downtown Chicago.
The other reason is when I make it – I know what’s in it, it’s something delicious and since I am still on my weight loss journey- (following WW).

Basically I took what veggies I had in my fridge and started chopping.
- Purple cabbage
- Green onions
- Baby bell peppers
- Carrots
I didn’t even cook these- I just added them to a meal prep container. I really like this brand from Target – 5 containers for $12.99.
These meal prep containers I’ve had these for several months and they don’t leak. Highly recommend getting them.
Udon noodles are so great! I cooked 1/2 a serving of Udon noodles, drain and set aside. These are the ones I used.
I added the veggies, I threw in 3 frozen pot-stickers from Trader Joe’s- and 3 tablespoons of Marion’s Thai pepper garlic marinade and the cooked Udon noodles.
When it was lunchtime- the meal was cooked in the microwave on the fresh veggie setting (about 4 minutes). In another bowl – the crunchy kale salad was added and a tablespoon of balsamic dressing.
Once my stir fry was cooked in the microwave, you add it to the chopped salad. It was so flavorful with marinade. Not spicy – just outstanding! Every bite was delicious!
The whole dish was only 6 Smart Points if you are following Weight Watchers.

- 3 SP for the pot-stickers
- Veggies are 0 SP
- 1 SP for marinade
