Yesterday was a great day! It was one of those days that I got everything done that I wanted, I stayed within my points, I EXERCISED, and made a great dinner!
First of all, one of the best things that happened yesterday was this:
My friend Kathy brought me back blueberries from her summer cottage in Michigan!!
How nice is that? I didn’t have time to make muffins with them, but that’s on my to-do list tonight!
And, as soon as I got home from, I got changed and did a new work out dvd that I got from the library. It was HARD! It was mostly a whole body work out with weights, a lot of squats, lunges, biceps, tri-ceps, push ups etc… the tape was an hour long and I did 40 minutes which I thought was good!
So after my work out I made my home made mac and cheese. On the side was green beans with a little stir fry sauce drizzled over! The mac and cheese is approx. 7 points.
This morning for breakfast I made 1 egg, 2 egg whites, 2 oz. of ham cubes, .5 ounce of reduced fat Swiss Lorraine cheese on a low carb tortilla 6 points!!
These low carb tortillas are 110 calories and 11 grams of fiber for one tortilla!!
This is the ham I used for my mac and cheese last night as well as for my breakfast this morning. For a 2 oz. serving its only 70 calories!
So, I have all these blueberries, anyone have ideas what to make with them??

Michigan blueberries are the best!! I may be biased though 😉
Every summer we went up north, we would pick wild blueberries and then eat them with plain Cheerios. Summer in a bowl in my opinion!
wow- weee that is a great day – a handful of blueberries is hundreds of times the antioxidants you need in a day – you are set!
The blueberries look amazing. If you’re interested I have a v. easy blueberry tart on my site under Other Desserts (takes about five minutes!).
Wow, i’d love to have such a quantity of blueberries! You can make coffeecakes, crumbles, muffins, bars, jam, etc…

Blueberry is one of my favorite summer berry. You can lots with it, but with good quality blueberry, I just eat it fresh.

Whoa that’s alot of blueberries! You can use them for about anything like muffins, in salads, cakes, syrup. Lucky you!
