I’m trying to stick to a program where I work out as soon as I get home from work. I only work about 5 minutes from my house, so I am home by 5:05 and by 5:15 I am ready to go to work out until 6:00 and its still not too late to start dinner!
I did level 1 on Jillians 30 day shred. It was definitely hard, I couldn’t do all the push ups, but other than that I was able to finish it!
While I was working out, I was thinking about what to make for dinner. I knew I had frozen ground chicken, I had pasta, and cans of tomatoes, so I thought I would make chicken meatballs with the pasta
If you’ve never worked with ground chicken its REALLY moist, more so than when you are making meatballs from ground beef. I didn’t have bread crumbs so I added wheat bran flakes, no egg, just garlic, italian seasonings and spices. I sauteed them in a skillet until they were browned, but not all the way cooked, then added chopped onion, garlic and (2) 28 oz. cans of tomato sauce and whatever spices you like.
I’ve been using smaller bowls and plates. Studies show you feel more satisfied if a small plate is full of food vs. a larger plate where it seems like you aren’t eating enough!
With a little Romano cheese on top, it was AWESOME! I weighed out 3 oz. of meatballs, 1 1/2 cups of pasta and about a 1/2 cup of sauce for 8 points!
This morning on my way to work, I stopped by a fruit market by my house to stock up on fruits and veggies for my office. So this was my totally deluxe breakfast. I used some of the blueberries my friend gave me this week!
I love this breakfast so much. Trader Joe’s cereal, fiber one, skim milk and banana, blueberries and strawberries!!
Check back tomorrow, I have chicken tortilla soup in my crock pot right now for dinner, I can’t wait!

I just used ground chicken for the first time this weekend and was wondering if it’s always that moist. Your meatballs sound delicious! And yay for working out, I’m just starting to get back into things too!

I’ve used ground turkey on occasion, but never ground chicken!
As I lost my weight, I gave up all meat but poultry. I’ll have to try this, it looks yummy!
It’s so smart to use smaller plates. Good to recondition our brains about what a healthy portion should be. Great job!

Using smaller plates really works! I am using smaller plates (and coffee cups instead of bowls) more and more. And finally, your fruit looks simply delicious!
