I made these last night and I adapted a recipe, so I wasn’t sure how they were going to turn out. I brought one for my breakfast this morning, and upon taking the first bite, my first thought was “this is like eating chocolate cake!” How awesome is that?
ΒΌ cup leftover coffee
1/2 cup low-fat buttermilk (or 1/2 cup skim milk with 1/2 tablespoon vinegar or lemon juice stirred in)
3 tablespoons low fat vanilla yogurt
1/3 cup fat free sour cream
2 large eggs
1 teaspoon vanilla extract
1 1/4 cup whole wheat pastry flour
1/2 cup all purpose flour
4 tablespoons sugar
1/2 cup firmly packed brown sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup chocolate chips (or chocolate chunks)
Preheat the oven to 375 degrees, and spray a 6 cup jumbo (or 12 cup standard) muffin tin with cooking spray (or line with paper liners).
Add the coffee, the buttermilk, yogurt, fat-free sour cream, eggs, and vanilla. Whisk until well blended.
In a separate bowl, combine the flours, sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt and whisk until well blended.
Stir the buttermilk mixture into the flour mixture, stirring only until just combined; fold in chocolate chips.
Divide the batter evenly between the prepared muffin cups and bake for about 25 minutes (or until a toothpick inserted in the center of a muffin comes out clean.
Makes 6 jumbo (or 12 standard) muffins.
Per standard muffin, 152 calories, 2.5 grams of fat, 2 grams of fiber, 28 grams of carbs and 13 grams of sugar

This recipe was actually adapted from a great site I used to go to all the time called Cooking Done Light. I used to visit it all the time before I started my blog and then she just stopped posting. My sister addressed this issue last week, when some of our favorite bloggers just stop one day! The person who started Cooking Done Light was the inspiration for me starting mine. Once she stopped posting things, I thought, “hey I can do that too!”. I don’t know whatever happened, if she just got tired of posting, got married, had kids, moved away?? She does have a lot of great recipes still up, so it’s still worth taking a trip over to her site. Maybe if you leave a comment, she’ll start posting again?

I would totally be happy with having chocolate cake for breakfast. Especially at 152 calories a pop. These sound delicious! You always have the best muffin flavors.
Contrary to what the Wheaties people say, I think chocolate cake could the BREAKFAST OF CHAMPIONS! I’m going to bookmark this and try it soon! Thanks for the recipe!!!
