Sometimes when I go to the store, I have a plan about what I am making every night. Growing up, my Mom would do the weekly shopping, make a menu and post it on the refrigerator so if you asked her “What’s for dinner?”, she would say “Look on the fridge!” I have tried to do that much of my adult life with my own family, but some weeks, it gets so busy, I’ll go to the store and buy chicken, and rice, ground beef, tomatoes, pasta, fish, etc… and just hope I have the ingredients to make something out of it. That’s how my grocery shopping went this last week. So, last night was Thursday and I knew I had chicken tenders frozen and shrimp, so before I left work, I googled recipes with chicken and shrimp to see what would come up. There were a lot of jambalaya recipes, a few soups, but I knew I didn’t have enough ingredients to make those, so I kept searching until I saw a recipe for kabobs. Hmmm… I thought that could possibly work, although I wasn’t in the mood to start the grill, I figured I could do it using my broiler. When I got home, I defrosted the tenders in my microwave, then I looked in the fridge to see what I could baste it with. Should I make a rub? Just sprinkle it with Lemon Pepper, or I had Montreal Steak seasoning. Then I saw it. I had an unopened bottle of Paul Newman’s Lime Vinaigrette Dressing. I decided to marinate the chicken in that as well as the shrimp. I didn’t take the time to put it on actual skewers, but I just laid out the chicken on my broiler pan, with chunks of red onion. I cooked the chicken for 10 minutes on one side, then turned it, added the shrimp because it takes less time to cook. When I took the chicken and shrimp out, I rebasted it with the Lime Dressing and it was so good. I cooked brown rice on the side and made a salad and it came together way better than I expected. The dressing is only 60 calories for 2 tablespoons. I haven’t tried all of his marinades/dressings, but the ones I have tried, I love!
