Since my twin sister is diabetic, she mostly makes savory breakfasts vs. sweet ones. Sometimes I get a little jealous that her breakfasts are so deluxe, so I decided to make a great breakfast for myself.
Today, like many people, reality hit, weight was gained over the Holiday and it’s time to buckle down again. But just because you are trying to eat fewer calories, doesn’t mean you have to sacrifice a thing!
An example would be this totally deluxe frittata that I made in about 10 minutes before work.
Ingredients:
1 serving of canned diced potatoes*
.5 ounce sharp cheddar cheese
2 TB. diced red onions
1 tsp. olive oil
1 egg + 1 egg white
2 TB. milk
Sprinkle of chili powder, salt and pepper
In a small non-stick skillet, add the olive oil and onions and cook for several minutes. Add the diced potatoes. *If you have never gotten potatoes out of a can, it’s cheap and they come whole, or diced, or sliced. Look for it in the veggie section.
Add the spices to the potatoes and cook until they start to brown (about 5 minutes). In a small bowl, add the egg, egg white and milk and cheese and whisk until frothy.
Pour the egg mixture over the potatoes and just let the eggs kind of set on the bottom. After several minutes, I took a plate, placed it over the pan and flipped the frittata onto the plate and slid the uncooked part into the skillet and cooked for another few minutes. SO GOOD
Serves 1 221 calories, 9 grams of fat and 3.7 grams of fiber
With that, I made a smoothie. A few BIG handfuls of fresh spinach, ½ cup of orange juice, 1 carrot, diced, and 2/3 cup of frozen mango chunks. I threw that in my magic bullet and let it go until it was all smooth.
My smoothie was 174 calories, 0 fat and 5.8 grams of fiber!
This kept me totally full ALL morning. I think I might make this again tomorrow!!
And, in case you don’t know, THE BIGGEST LOSER starts all over again tonight!!

I always just have a smoothie for breakfast… habit now, get fruit and I add milk for calcium…
A good start for me, and i was able to avoid any weight gain over the holidays… no lose, but no gain is a gain considering.

I usually have a smoothie for breakfast as a way to get in my fruits and veggies.

I’ve used canned potatoes before but never thought to toss them into a fritatta – great idea! Saves so much time so it can be a weekday breakfast.

I love frittatas! I agree – Biz is the queen of breakfasts. I always feel accomplished and “like Biz” when I take the time to make a great, filling breakfast. I’m just not a morning person, so most of my breakfast is consumed as dinner! hehe
