I haven’t made these cookies in the longest time. I got the recipe from Celine at www.havecakewilltravel.com. She is an awesome Vegan cook, and I love her site because I learn all these different ways to bake. These cookies I call Freezer Cookies because I will make a batch and put them in the freezer. When I want a cookie, I can just defrost it in the microwave, or not because they taste awesome right out of the freezer. These cookies also have no butter/oil or eggs! The cookies shown are slightly different, because I didn’t have enough brown sugar, and I didn’t have chocolate chips, so I added a few tablespoons of m&m’s. I will post the original recipe because I think its even better than the version I made last night.
The best thing about these cookies, is they are super sweet and rich, so you will only need one, so you can’t wreck your healthy eating plan on these!
Ingredients:
1/2 cup whole wheat pastry flour
1/2 cup quick cooking oats
1/4 tsp. baking soda
1 TB. chocolate chips
2 1/2 TB. peanut butter (chunky or smooth)
1/2 cup light brown sugar
2 1/2 TB. skim or soy milk (I used soy)
1 tsp. vanilla extract
Mix all the ingredients together. This recipe only makes 8 cookies, so feel free to double or triple this recipe!
Bake at 375 degrees for 8 minutes, then let them cool on the cookie sheet for 5 minutes. Because of the brown sugar, the inside is really sweet and moist.
Each cookie is 135 calories, 4.8 fat and 1.75 fiber
So if you want to enjoy a great cookie, without straying from you healthy eating plan, make these! They will become your favorite cookies in no time flat!

It is like the perfect amount of cookies for someone who lives alone and has zero self control. I make cookies they all get ate.

Lara, you could definitely use whole wheat flour, the only difference is the whole wheat pastry flour is a bit finer.
