I’ve actually never made any kind of souffle before, but over the weekend when I went to a luncheon with my Mom, the buffet had one and even though I didn’t put some on my plate, I tasted some off my Moms plate. I loved how light and fluffy it was. My sister had made one but I forgot to write down her recipe, so this is the recipe I came up with:
In my magic bullet went:
2 eggs
1 slice deli turkey
1 slice deli salami
1 green onion
1 tablespoon sour cream
1/2 ounce muenster cheese
Whir that together for about 20 seconds. Pour that in a ramekin (sprayed with cooking spray for 15-20 minutes in a 375. Done!
And to make it even more deluxe, I made a small potato into hash browns to go on the side with an orange. It kept me full for hours
The calories for the souffle for one?
245 calories 16 grams of fat 18 grams of protein and 1 gram of fiber.

Well Jenn, I love ya but…
You have a beautiful baked omelet. To get that wonderful light puffy egg dish, I separate my egg whites, whip them to stiff peaks and fold those into the mix. I also line my ramekin (actually, for a single serve souffle I like to use a coffee cup). Anyway, line the inside with butter, pop that in teh freezer for 10 minutes (while you are whipping the whites). Then coat with grated Parmesan cheese so the eggs have something to stick to as they climb.

But like I said, you have a great baked puffy omelet. It could even be an excellent Frittata. It’s just semantics.

I’ve never made an egg souffle – I like how light it is and I bet the Tbsp of cream cheese in there really made a difference! Yummy!
I used to make a carrot souffle when I lived at home, but I have no idea how I made it or where the recipe is now! haha
