Yesterday I brought freezer waffles to work and topped them with fresh strawberries and banana. It was so good I thought I would do the same thing today, but decided to saute the strawberries and banana and pour that over my waffles. This recipe is adapted from Spark People.
To saute the strawberries and bananas, I just cut up the strawberries and bananas, put them in my small non-stick skillet, and added about 1 TB. of water and 1 tsp. of sugar. Cook on low and the water/sugar becomes like a simple syrup and its so awesome!
You won’t even need any regular syrup!!
Ingredients
2 cups quick oats
2 teaspoons baking powder
1 egg
2 Tablespoons sugar
2 T vegetable oil (optional)
1 1/4 cups milk
1/4 cup ground flax seed
2 TB. mini chocolate chips (what a surprise, right?)

Put oatmeal in the blender and blend in high speed till the oatmeal resembles corse flour add baking powder and mix then add oil, egg and milk. blend only for a short while till mixed. if batter too thick add milk a little at at time stir in with a spoon. Also batter thickens as it sits best to cook it as soon as possible. Pre heat waffle iron and use non-stick spray. Cook according to instructions of waffle maker.

*I was very proud of myself because we had leftover pizza last night from dinner and I said “No!” to the pizza and chose this healthy breakfast instead! I’m so happy I did that!
This afternoon my daughter and I are going to my nieces wedding shower, so I plan to make the healthiest choices I can! Wish me luck!
