I had a great day today! It was gorgeous outside, not a cloud in the sky, so I decided to ride my bike to work! Then when it came time for lunch, I just had to get out again, so I jumped back on my bike and rode for 30 minutes (4.2 miles!) Then, I rode my bike home, and did 25 minutes of Jillian’s 30 day shred!
I know, I couldn’t believe it myself! The problem I have always had, is eating great and not exercising, exercising and not eating great, but I have trouble putting those two together.
The best part is I am getting the eating great part down pretty well, so I feel since I have a handle on that, I have to move more to lose more, and that’s what I plan to do!
I left my camera at work, so I have no great pics from dinner :0(. But, I do have a recipe to share that sounds amazing, which I am trying over the weekend.
My Mom picked me up a 2001 Cooking Light Cook Book from her church rummage sale last weekend, and it has some wonderful recipes to say the least that will help keep me going in the right direction!
Chicken breasts with feta cheese sauce
6 (6 oz) chicken breasts
1 TB butter
4 tsp. flour
1 (12 oz) can of evaporated fat free milk
1 TB. fresh chives
3/4 cup crumbled feta cheese
Cook the chicken on both sides until no longer pink and set aside.
In the same sauce pan, melt the butter, add the flour. Cook for 1 minute, stirring constantly. Gradually add the evaporated milk stirring constantly. Reduce heat to low and simmer for a few minutes until thickened. Add the chives and cheese and let the cheese melt. Serve one chicken breast with 1/4 cup of the cheese sauce. How yummy does that sound?
1 chicken breast + 1/4 cup of the sauce is 243 calories, 9 grams of fat, 30 grams of protein! Not bad at all!

Great job sneaking in extra workouts on top of your lunchtime one! When I was walking to and from work, it made a huge difference for me.
Thanks for your thougths on calories…I think we have similar ideas in terms of meals. Unfortunately I tend to gradually increase the calories through the day because I love big dinners so much (so, instead of 500/meal, more like 400, 500, 600). It all evens out, right? 🙂
Way to go!! The way I see it is, I’ll never regret going to the gym (or working out) no matter how much I don’t want to go, but I’ll for certain regret NOT going. And look how good it makes you feel!! Kudos!

Exercise is definitely one of the keys to a healthy lifestyle and you’ve got a GREAT attitude about it. Your head is definitely in the right place.
Cooking light is such a great resource. So many good recipes with real ingredients, not a ton of artificial fake stuff that happens to have fewer calories. Sounds delicious, hope you like it when you make it.
