I woke up late this morning, so this is like brunch for me today.
I toasted 2 slices of rye bread, cut up some kiwi, and had some very sweet grapes.
For the eggs, I started out making a frittata, but it was starting to stick on the bottom, so it turned into scrambled eggs!
For the eggs I used:
1 egg, 2 egg whites
1 oz. pepper jack cheese
3 oz. shredded potato
handful of spinach
salt and pepper to taste
I peeled and shredded a small potato and cooked that for a few minutes in a skillet coated with Pam cooking spray. Once that was cooked a little, I added the egg mixture, tossed in the spinach and the pepper jack cheese and just scrambled it up. This whole breakfast is only 400 calories! It was so good and it took forever for me to eat. The best part was I just got a Cooks Country magazine in the mail the other day, so I read about some delicious recipes over breakfast. It was a great way to start the day!
Oh wow, it looks amazing. I must be honest, I don’t think I have had rye bread in a long time! Now I want some!
That is one tasty looking breakfast!
