Thanks to Jessie and Michael of Chef Fresco, I tried a new recipe they made using sausage and veggies. I love trying new recipes. Usually when I make something new, I just wait and see if my family says anything. Sometimes they do, sometimes they don’t. BUT, I always know they like it when they go back for seconds and everyone did! There was hardly any leftover!
Here is their recipe:
INGREDIENTS
3 tablespoons extra-virgin olive oil
1 large red onion, diced
4 cloves garlic, smashed
1 tablespoon paprika, plus more for garnish
Salt
3 tablespoons all-purpose flour
14 ounces light kielbasa, cut into small chunks
4 medium carrots, peeled and cut into large chunks
2 parsnips, peeled and cut into large chunks
14 ounces small red-skinned or new potatoes (6 to 8), quartered
1 tablespoon cider vinegar
Freshly ground pepper
1/2 cup cilantro, roughly torn into pieces
3/4 cup sour cream
DIRECTIONS
Heat the olive oil in a Dutch oven or heavy pot over medium heat. Add the onion and garlic; cook, stirring occasionally, until soft and glistening, about 6 minutes. Add the paprika and 1 teaspoon salt; cook until the oil turns deep red, about 1 minute.
Add the flour and cook until just toasted, 30 more seconds. Immediately whisk in 4 cups water.
Add the kielbasa, carrots, parsnips, potatoes and 1 1/2 teaspoons salt.
Bring the soup to a boil, then reduce to a simmer; cover and cook until the vegetables are tender and the broth has thickened, about 20 minutes.
Add the vinegar and season with pepper.
Combine about half of the cilantro with the sour cream in a small bowl and season with salt and pepper.
Ladle the stew into bowls; top with the remaining cilantro, a dollop of herbed sour cream and a sprinkle of paprika.
*I didn’t have any sour cream, so I didn’t do the last part, and I diced my veggies very small since I was making it on a weeknight and I wanted to make sure it was cooked through. And, my family didn’t even know they were eating parsnips! They were really good in there.

What drama last night! What’s up with the red team? Is the woman on there trying to be like Vicky from last season? I have to side with Jillian on this one. I totally think that she took advantage of immunity by not losing weight until it counted. I think had Jillian and Bob not said a lot about it, she wouldn’t have lost any weight this week either!
I also felt sorry for the green team. I really wanted them to stay longer. I think Migdalia has a lot of issues and I thought it was strange how her Mom Miggy kept on telling her not to cry!
Michael did great again this week, I think the other people should lay off him, he’s doing fine!
I also like the grey team, I think they are going to go far in the competition!

I love kielbasa, but never get to have it b/c my husband hates it! Growing up, my mom made it often, but his family never had it…..so that just goes to show we eat what we grew up with!
Love kielbasa I even make some home made smoked kielbasa, and this is a great recipe, thanks for sharing.
I hate the red team — I think she is very manipulative and definitely not telling the truth. And yes, that means I am calling her a liar! I felt bad for the green team although I do think the mom gave up. I too like the grey team!
I love the idea of putting sausage in a stew! (BTW, yes, roasting radishes does take the bite away.)
I kind of like the orange team – they’re the mother/son with the crazy hair, right? Anyway, they seem to get down to business without a lot of complaining. I think the green team has some serious issues, and the red team – ugh. She did lie and I think she backed herself into a corner and is stuck in that lie. Wish they would just get eliminated…too much drama last night!
Mmm, I love kielbasa & have recently tried turkey kielbasa. (which I thought tasted the same for a way better nutritional profile!)
I will give this soup a try – I have a recipe similar with the addition of lentils that I haven’t tried either, so maybe I will combine them 🙂
