This is by far the easiest and quickest dinner ever! I saw a recipe from www.menshealth.com that had very few ingredients, but that I could double to make for my family.
Here’s the ingredients to serve 4
- 12 ounces flank steak
- 1 medium onion, sliced
- 1 green and 1 red bell pepper, cut into strips
- 1 small jalapeno, cut into rings
- 1 tsp. olive oil
- 1/4 tsp cinnamon
- 1/2 tsp cumin
- salt and pepper to taste
Slice the meat diagonally and across the grain into thin strips. Place it in a Ziploc bag with all the other ingredients and shake well to combine.
Dump the mixture in a skillet and cook for 5-6 minutes until the steak reaches the desired doneness. Serve with whole-wheat tortillas.
Each serving (2 tortillas with 4 oz. meat) 310 calories, 8 fat and 5 fiber.
I served it with chips and salsa and a side salad and it was so good! And the best part is, you can whip this together during the week with no problem!
