Sometimes I like making a dish that just serves one, so I can eat the whole thing, not worry about measuring it after cooking, there are no leftovers, just one big meal. I made these from a recipe I saw in Fitness Magazine. I love shrimp, it is so low in calories, and you can make it so many different ways. This could be a great lunch to take to work and make your co-workers jealous, or if you are the only one home for dinner, you can make yourself a great meal!Cilantro-Lime Shrimp Fajitas – Serves One!
- 1/2 cup sliced onions
- 1 cup sliced multicolor bell peppers
- 1 TB. olive oil
- 1 garlic clove, minced
- 1 tsp. ground cumin
- 4 ounces precooked frozen shrimp, thawed
- 3 TB. fresh cilantro
- 1 lime, juiced
- 2 whole-grain tortillas
Saute onions and peppers in oil with garlic and cumin for 6 to 8 minutes, until tender. Toss thawed shrimp, cilantro, and lime juice with the hot vegetables. Divide between 2 tortillas.

Now, some of you might be thinking almost 500 calories! That’s too much. But when you think about your whole caloric intake for the day, this meal can fit into anyone’s healthy eating plan. Plus, if you eat this, you don’t feel like you are on a diet! When I ate it, I was saying to myself, I am actually losing weight eating things like this and it makes me happy!
