I kind of felt like my blog friend Christine from The Raw Project today. Christine eats more fruits and veggies than anyone I know! We had salad club again at work, and today it was SPECTACULAR!
On my salad: spinach, romaine, swiss chard, blueberries, almonds, toasted flax seeds, carrots, cucumber, dried cranberries, a few dried banana chips, garbanzo beans, a touch of feta cheese….All I can say is YUM!
And the best part is, there is enough to do it all again tomorrow!
Did I tell you what my favorite salad dressings are right now? The Kraft Light series. Only 25 -40 calories per 2 tablespoons (depending on which flavor)! And sometimes at my local grocery store it’s 2 for $4.00!
Have you tried that kind of salad dressing before??

Do you ever buy those noodle soup bowls from Trader Joe’s?? They look like this:
I love them, but was wondering, why am I buying them, when I can make it myself??
You need: Chicken stock (I buy the powdered kind so you just need to add water + a few teaspoons of the chicken stock) whatever frozen veggies you want, angel hair pasta and maybe a splash of your favorite stir fry sauce (mine is House of Tsang brand Thai Peanut) and if you have a few Trader Joe’s frozen potstickers, you can throw a few of those in too!
It’s so much cheaper to make, plus I keep the ingredients at my office for a quick and easy lunch!
I’ll add 2 cups hot water, 2 tsp. of the chicken stock and frozen veggies AND the angel hair pasta and cook for about 5 minutes in the microwave or until the pasta is tender and then add the stir fry sauce and voila! A great and healthy soup in a snap!
If you’ve only bought chicken stock already in a can or carton, this is what I am talking about:
Each container has about 200 servings vs. just buying the cans of already made chicken broth that you can use only once!

I love that salad dressing! The light is so much better for you than the free versions too. I go for the light zesty italian. There was a coupon for it in my paper on sunday too!

I love Salad Club days! I have been hooked on Newman’s Own lite dressings but will have to check out the Kraft once my supply is depleted (for some reason I have three unopened bottles – what was I thinking, lol?).
My new favorite is the all natural Ranch from the T. Marzetti’s…not exactly the healthiest (it is ranch, after all)….BUT it has very few ingredients and I can pronounce them ALL and I know what everything is!

That soup is a fabulous idea! I like to keep stuff like that in my desk to have another option for days when I don’t want what I’ve brought for lunch.
Everytime I read about your Salad Club I think I should start one at my job. I’m a big Newman’s Own fan – light versions, simply because they are one of the very, very few dressings that are all natural and don’t have high fructose corn syrup in them.
Helen you should start a salad club! It’s so easy and it’s a great way to stay on track during the work week!
