Let’s Make Quick & Easy Pancake Bake

If you follow me on Instagram then you know I love to meal prep. It may not be breakfast and lunch every week, but I like to have breakfasts done, because then I can work out for a little before work, get ready and it only takes me a few minutes to make this quick and easy pancake bake.

I made this using Hungry Jack Light and Fluffy Pancake Mix – although any pancake mix would work! It’s a super easy recipe because all you have to do is mix, put in a pan and bake!

I definitely will make this again. It’s freezer friendly too! Just store in a Ziploc bag and place a piece of parchment paper between the layers. Either air fry for 5 minutes at 360 or Microwave for 1-2 minutes.

This was the best – one slice pancake bake – topped with 1 tablespoon peanut butter, banana, blueberries, a sprinkle of granola and sugar free Log Cabin Syrup
