I make chicken at least once a week like a lot of people do. I was trying to think of something different that I haven’t made before, and this popped into my head. I didn’t have any prosciutto, so I stopped by the store on my way home and asked for 7 slices of prosciutto! It came up to $2.67, so I thought that wasn’t a bad price. Believe it or not, the chicken you see on my skillet was TWO chicken breasts! They were huge! So, I trimmed the fat off, cut them lengthwise in half so they were a lot thinner, then cut those pieces in half. The great part about it was I had smaller portions, so I wasn’t tempted to eat a more than I should!
For two of the pieces of chicken, I brushed dijon mustard before I wrapped it in the prosciutto. For all the chicken, I just seasoned it with salt and pepper.
After wrapping each piece of chicken, heat a griddle, on medium/high heat. I brushed my griddle with canola oil, so it wouldn’t stick. I cooked each side for 4 minutes. Don’t be tempted to keep flipping it over and over. Let the meat sear on each side so the prosciutto sticks to the chicken.
After cooking on each side at medium/high heat for 4 minutes, I turned the heat to low and cooked for 2 minutes more on each side. They turned out great!
I served roasted potatoes and roasted green beans with it and it turned out to be a really easy meal, which my whole family enjoyed!

Mmm great idea! Kind of like a cordon bleu, but without the hassle of stuffing the chicken and keeping all the goo inside!

I have never known anyone to measure prosciutto by the slice. For me, it’s a quarter pound or nothing — love the stuff!
