How I make Pot sticker pillows
I had every intention of getting to bed early, but while watching “Diners, Drive-Ins and Dives” on Food TV, one establishment made one of my favorite things: pot stickers! Some people call them dumplings. So that had me thinking I wanted to make some to take to work for lunch.
I knew I had egg roll wrappers, ground turkey, edamame, red onion, garlic, and broccoli slaw, so that’s what I decided to put in the wrappers.
You can buy this kind of turkey at Aldi Food Stores. I only used 3 ounces uncooked for the whole recipe!
In a large skillet coated with cooking spray, I added one serving of broccoli slaw (chopped) and 3 ounces of baby carrots, 2 cloves of garlic and 1/4 of a small red onion chopped
A few great things about this: This whole skillet is only 73 calories!! 25 calories for the broccoli slaw and 35 calories for the carrot and 13 calories for the onion!
After the veggies had sauteed a bit, I added 3 ounces of uncooked turkey and cooked it until the turkey was cooked through.
Next I added a few teaspoons of classic stir fry sauce to the veggies
I cut each egg roll wrapper into 4 squares. (Each square is only 20 calories!) Add about 1 TB. of the filling and fold up. It kind of looked like little pillows to me, so that’s what I am calling them!
This is what they looked like before cooking. I added about 1/4 cup of water to the pan, and put a lid on the skillet and steamed the pot stickers for a few minutes until all the water had evaporated. I then sprayed them with more Pam Cooking Spray and 1 tsp. of canola oil.
Cook on medium high heat about 3-4 minutes per side or until golden brown
And serve them with any stir fry sauce you would like.
These turned out so great. Each pot sticker is only 30 calories, so go crazy!!
