These are really easy to make, even on a weekday. You can make them ahead and freeze them to heat up in the microwave at work, or make them for a brunch. The base of mine is your basic refrigerator biscuit. Each biscuit is only 50 calories, or you could omit the biscuit and have a crustless quiche!
- 1 roll of refrigerator biscuits
- 1/2 onion, grated
- 1/2 cup Swiss cheese, grated
- 4 eggs
- 1 cup skim milk
- 1 tsp. dry mustard
- salt and pepper to taste
Lightly grease a muffin tin and put each biscuit at the bottom. Combine the rest of the ingredients in a separate bowl, and whisk for a few minutes. Pour evenly over the biscuits. You will have two spaces left over. Bake at 350 for about 20 minutes, or until a toothpick comes out clean. You can vary this in so many ways. You can do feta cheese and spinach, or cheddar cheese and add ham cubes, you could add green pepper, whatever you like! The best part about this, is now I have a breakfast for each day this week. I plan to have 1 with a yogurt and a piece of fruit each day this week.Each muffin is only 113 calories and 4.5 grams of fat.
