Your mini dash waffle iron can be used to make these delicious egg waffles – you just need 2 ingredients!
If you haven’t seen the DASH mini waffle makers – they are the best! $10 – available at Kohl’s, Target, Walmart or Amazon to name a few places to buy it.
Up until a few weeks ago, I’ve only made baby waffles in it, but decided to see what would happen if I just crack and egg, add a little cheese and cook it like a waffle.
The result? EGG WAFFLE! All I did was spray the waffle iron with cooking spray, cracked an egg directly in the waffle maker.
Break the yolk, and add a sprinkle of cheddar cheese and everything but the bagel seasoning and cooked until the steam dissipates. (3-4 minutes).
I’m following Weight Watchers – and the egg waffle was 1 smart point for the cheese.
Heat up a leftover chicken sausage for 3 smart points, and added apple, a little kale mixed with Garlic Expressions vinaigrette (1 Smart Point) and a handful of blueberries.
This breakfast literally took less than 10 minutes to make.
I know that a lot of us are working from home because of COVID-19 – I’m going on 5 months of not travelling by train into Chicago for my job.
While I desperately miss the hustle and bustle of Chicago, the one thing I’ve loved is being able to cook in my kitchen for my breakfast and lunch!
