How to make pasta sauce with vegetables from your garden!

For the first year – my garden is producing so many vegetables – this homemade pasta sauce is so great and fresh!

Homemade pasta sauce

My garden is booming with tomatoes! So excited to make things with food I’ve grown.

Ingredients
  

  • 1 pound tomatoes roma and midnight snack variety
  • 1 tbsp olive oil
  • 1/4 medium onion
  • 1 green bell pepper
  • 6 baby bell peppers
  • 2 melrose peppers
  • 2 tsp oregano
  • 1 tsp salt
  • 1 tsp. pepper
  • 1 tsp beef bouillon
  • 1 tsp Worcester sauce
  • 1/2 cup fresh basil
  • 3 cloves garlic
  • 1 6 oz. can tomato paste

Instructions
 

  • In your largest stock pot, add all the ingredients, EXCEPT the fresh basil. I puree the sauce after it’s done, so not necessary to cut the vegetables into a certain size.
  • Cook on low heat for one hour.
  • Add the fresh basil.
  • Using a stick blender, puree until smooth

Notes

I just used vegetables from my garden.  If you are buying from the store, roma tomatoes are perfect for this sauce.  

This is the 3rd year I’ve had a garden in my backyard – with so/so success. This year however, with lessons learned from the past two years, I’ve had my most successful garden yet.

I planted my tomatoes in a different spot in my backyard and it’s made all the difference! They are getting more sun and I’ve gotten so many tomatoes this year.

You could freeze this sauce, can it, or use it to make my 4 ingredient one skillet pasta dinner!
