So trying to get more fruits and veggies in, I’ve had to really think about what I was eating and how to fit it all in.
For breakfast, I made a smoothie, with spinach, acai berry juice, and 2 servings of frozen mixed fruit.
It was really good! Then I had 1/2 cup of oatmeal with 2 cups of water and 1/2 cup of blueberries and 1 TB. of dried cranberries.
By the time I got done, my oatmeal was purple from the blueberries, it was super filling!
For lunch I made the noodle bowl again from Trader Joe’s but added 3 potstickers and 2 servings of green beans and 1/2 cup of edamame.
These noodle bowls are only 99 cents and are super convenient. Although afterwards I thought I could have just made my own with chicken stock and my own noodles!
This soup took me forever to finish! I had to heat it up again, because I would work and eat/then work and eat!
I had no morning snack or afternoon snack because I wasn’t hungry. For dinner I made pasta, with sauce that I added carrots, onion, cauliflower, green pepper to, all pureed up. I had 1 cup of sauce with the pasta.
And….for dessert later, I had an apple! So I had 11 servings of fruits and veggies!!!

When I got home, there was a huge box waiting for me. It was soup from a company that is introducing new ready to eat healthy soups!
I was shocked by what they sent me!

Yup. I have some in my pantry even now. I’ve tried the Miso Ramen, Tomato Basil with pasta, the Split Pea, and Spring Onion. I really like the spring onion, which has these rice Thai-type noodles. Nice. I do NOT like the ramen. Icky. So I use the packet to make Miso soup and add tofu and call it a day. The Tomato Basil is fine, but needs a lot more steeping/cooking time than the instructions. A LOT more. The Split pea I have had in the regular and lower sodium versions. I enjoyed both. My fave “split pea in a cup” instant soup.
I bought a black bean and lime one, but forgot about it and it expired, so I’m curious what you think of it, as it is very popular on amazon.
I’ve also had Dr. McD’s oatmeals–the one in a cup that has peach/raspberry whish is soooo filling and delicious. And my fave instant oatmeal is from Dr. McD: the apple cinnamon. Very appley and nice.

Way to go! I seriously should follow suit and try this challenge, but I just don’t think I’m that creative enough when it comes to food. (yet) Are you feeling any different since starting this?
