Since starting back counting points these last few weeks, I always go through all the things I did the first time I lost 60 pounds using Weight Watchers. I’ve kept all my food journals, recipes, tips from my success to try to help me out this time. I found this recipe which brought back great memories, because I made this crustless pumpkin pie recipe a lot for a special treat after dinner and it helped during my weight loss because it was so good!
Crustless Punkin Pie
Ingredients:
1 can pumpkin (15 oz)
1 can evaporated skim milk (12 oz)
3/4 cup egg substitute (or 3 egg whites)
1/2 tsp salt
3 tsp pumpkin pie spice
1 tsp vanilla
2/3 C. Splenda (or sugar) or to taste
Instructions:
Combine all ingredients and beat until smooth.
Pour into a 9″ sprayed pie pan
Bake at 400 for 15 minutes, and then at 325 for 45 minutes or until a knife inserted in center comes out clean.
Serves 8
Whole Pie: 8 points (or ONE pt. for 1/8 pie)
TIP!
Top this pie with a little fat free Cool-Whip for even more of a treat! Counts as a vegetable serving and high in fiber!

Last week was my first week and I was thrilled to lose 4 pounds!
Today, I stepped on the scale and guess what??? I was EXACTLY the same! Not a smidge higher or lower, exactly the same!!
BUT, I do have some things to celebrate this week that made me feel great!
I exercised every day as soon as I got home from work for 30-45 minutes.
I stayed away from stepping on the scale all week!
I used the Weight Watchers On-line tools and kept track of the foods I ate.
I weighed and measured all my foods with a food scale.
So, it’s still a successful week in my book and the scale will catch up next week!

good job on the weight loss – I found that eating richer foods made me eat less and thus I lost a lot of puffy weight…

Sounds like a successful week to me!! Crustless pumpkin pie is my go to for Thanksgiving! I’m not a fan of the crust unless it’s a little on the dark side aka burnt 😉

Jennifer – congrats! Look, if you lost 4 the first week, it’s sort of typical to set the second week, especially if you’ve been exercising.
Also, wonderful pie recipe! I made a similar one, but I can’t do artificial sweeteners, so mine was with fat free condensced milk for a few more calories/points, but still a great treat.
