Beef Stew

When I was on my way home from work last night, the clock at a bank near my house said it was 99 degrees! So hot! That is why I was so glad I took the 15 minutes before work to make this yummy beef stew in my crock pot. I’ve posted this a long time ago, but its so good and easy. It filled my whole crock pot and let’s just say, with my family of 5, there were NO leftovers!

What you need:

1 pound of beef stew meat
3 large russet potatoes, peeled and cubed
4 large carrots, sliced
1/2 white onion, chopped
2 cloves of garlic
3 cans (12 oz.) of V-8 juice*
splash of hot sauce
splash of worchestire sauce
salt and pepper
sprinkle of Italian seasoning

Directions:

Cut the beef stew meat into bite size pieces and place them in a ziploc bag. Add 1/4 cup of flour to coat the meat (this keeps the meat super tender). In a large skillet, add Pam cooking spray or a little olive oil, and brown the meat on all sides (it will still be raw on the inside).

Place the meat in the bottom of the crockpot, add all the veggies, and spices. Pour the 3 cans of V-8 Juice over it and that’s it! Cook on low. I put it on at 8:00 a.m. and turned it off when I got home about 5:15. The meat was so tender, it melted in your mouth!

*If you want a spicier version, you could try adding the V-8 spicy variety instead of the regular flavor. I’ve done that before and its awesome!
