I haven’t made pasta salad in the longest time! I don’t know why either, when its so easy! This was my version of put whatever veggies I have left in the pasta salad!
I used:
cheese tortellini
carrots
red onion
edamame
celery
Italian seasoning
salt and pepper
Few slices deli salami, chopped
Paul Newman’s Light Balsamic Vinagrette
Cook the pasta with the carrots, and rinse under cold water. Transfer to a bowl. I added the celery raw, I soaked the red onions in water so they didn’t overpower the whole thing. I cooked the edamame in the microwave for 2 minutes, shelled them, and rinsed them under cold water too, and added all that to the bowl. Chop up the salami and add that next. Pour enough dressing to coat everything pretty well. That’s it!
There are so many variations to this. You can use any kind of pasta, sometimes I’ll add ham cubes and peas and carrots, or green beans and feta cheese, whatever combo you like!
Refrigerate until ready to serve
Cold pasta salads = summer! Plain and simple π

I’m glad to see no mayo in this salad! Mayo in pasta salad is close to my biggest food pet-peeve! I love that you took the classy road, and dressed it with some lovely light vinaigrette! And the addition of edamame is brilliant, I’d have never thought of it!
I love pasta salad, especially in summer. I often make a big bowl and we just have it for quick pick-up lunches or dinners. My favorite is the Tuna Fusilli on my site–it gets better each day.

You know – I always forget about pasta salad too. My mom used to make huge batches and it’s SO convenient b/c you can use everything up and also have a big stash to grab a bowl w/ no prep. Thanks for reminding me!

What a GREAT IDEA to use tortellini in pasta salad!!! Seems like a great change from the boring and traditional spiral pasta!!!
