I had another successful day yesterday!! I did the boot camp class with my friend at work at a Pilates studio by our office. I was SUPER nervous to go, because the first class was so hard and I was sore for a few days after. Yesterday was no different! Lots of jump roping, lunges, squats, step ups, skipping (I know skipping around doesn’t sound hard until you do it for 3 minutes straight!) And the hardest was getting in push up position, putting a towel under your toes, and using your arms, walk forward, keeping your body back and push yourself backwards. Holy cow!
I really wanted to step on the scale this morning, but my weigh in is Friday, and I am making myself wait until then!
Last nights dinner was a breeze. I’ve posted my Chicken Tortilla soup before. I usually will do it in my crock pot, but all I had time for yesterday was placing 4 frozen chicken breasts, 1 quart of chicken broth and 1 tsp. chili powder, 1 tsp. cumin and salt and pepper.
When I got home the I took the chicken out, shredded it, put it in a big pot. I then poured the chicken broth from the crock pot in too.
In a blender, I used the same method as my spaghetti sauce and beef stew. I used up more veggies!
I placed 1 28 oz. can of diced tomatoes, 2 tomatoes from my Mom’s garden, 1 jalapeno, 1/2 head of cauliflower, 1/2 white onion, 4 cloves of garlic, 1 zucchini, and pureed the heck out of it.
I poured that into the pot with the chicken and chicken broth and added a little more chili powder and cumin.
Just sprinkle a little cheese on top, and crushed tortilla chips and you’ve got a great meal.
I make this a lot during the school year, because its so low maintenance and quick!

This looks really good–and easy. I really need to use my VitaMix and this would be a perfect recipe to do so. I think I’ll give this a try in the near future!
Well, I don’t have all of those ingredients but i can improvise and try something close. It looks that good, that I’m going to give it a try.

My mom has this big honkin’ crock pot and the only thing she’s ever made in it was this nasty chicken, carrot, celery, bland grossness!! Haha I scolded her and told her if she came up with some bbq/pulled pork/tasty stew I would forgive her 😀

My fave crockpot meal is pulled pork. I don’t have one myself, but my best friend always makes it at least once a month, and its amazing!
