I know what you are thinking…Jenn there is beef in beef stew, why do you call it very veggie beef stew?
I’ll tell you why! Last week, I made my very veggie pasta sauce by adding a bunch of extra veggies in my blender and pureed the heck out of it. No one knew! (until I told them afterwards!)
So, as I was making my beef stew tonight I thought what if I try the same thing??
I did my quicker version where I peel and dice potatoes, peel and dice carrots, and dice celery. I put that in a microwave safe bowl and cooked until the veggies were fork tender.
Meanwhile, I cut the beef stew meat in bite size pieces and coated them with flour (it makes the meat more tender that way). Brown the meat in a big pot.
Now for the sauce, I use 3 cans of V-8 juice. (12 oz. cans)
But before I added the V-8 juice to the pot, I added one can into a blender and then looked to see what other veggies I hadn’t used this week. I had 1/2 a cauliflower, 1 red pepper, 1 tomato, 1/2 an onion, some garlic and a zucchini! I put all those veggies into the blender and liquified them so there was no trace of any veggies!
Add the 2 other cans of V-8 juice to the pot, and add the pureed veggies from the blender. Now add the cooked carrots, potatoes and celery you cooked in the microwave. Add some salt and pepper, a little crushed red pepper flakes and a little oregano.
That’s it! It was SO good, and I felt great getting more veggies in!
Now, everyone except me had seconds….except for my younger son Mark. He doesn’t like my beef stew and I do sometimes always make him something else if he doesn’t like what I am making
I looked in my freezer and had forgotten that I had bought these to make for my lunch one day this week.
These turkey burgers come individually wrapped and you don’t have to defrost them before you cook them. They go straight from the freezer to the grill or skillet! Each patty is only 190 calories and 7 grams of fat. Has anyone else tried these before? I took a bite of his and I thought it tasted really good!

Mmm that looks so thick and hearty! I’d never know the difference and I’m studying it! Of course I’d love to eat a beef stew with all those extra veggies, but it’s still really cool to see picture proof and hear reviews that it’s an effective sneak tactic! 😉
