I hope everyone had a great Thanksgiving! My family did. I successfully cooked a turkey for only the 2nd time in my life and it turned out great! Although it was a good thing I checked because it was done an hour earlier than I thought!
With all the leftovers, I wanted to make turkey noodle soup. I’ve never made a stock using the bones/meat from the turkey, but after consulting with my sister I made a plan.
First, I took parts of the turkey that were leftover, a whole breast, a leg, etc… and put that in a big stock pot. I covered it with water. It took 12 cups to cover it. I used chicken stock that comes in a jar, you add 1 tsp. of the chicken stock per cup of water.
After simmering it for 2 hours on low, I took all the bones and meat out and let that cool.
I forgot to mention that I cut up 4 carrots and 2 stalks of celery and added that to the broth as well. I also added 1 tsp. of poultry seasoning.
After the meat had cooled, I just picked off all the meat. Meanwhile, I took my sisters advice and put the broth in the fridge so that the fat would come to the top and I could skim that off. Once I skimmed the fat off the broth, I added back the turkey and added about 1 cup of noodles. Cook on low for about 15 minutes or until the noodles are done
It tasted AMAZING! I was so happy I made the effort to make this. Not only does it use up a bunch of leftovers, but it’s so good for you!!
