I had bought a huge package of chicken, so even though I had chicken in my mac n cheese yesterday, I was going to make it tonight. I was tossing around ideas in my head, so I thought I hadn’t done chicken breast sandwiches is a while, so that would be pretty easy, and I had some russet potatoes I had to use up too, so of course I had to make fries!
I cooked the chicken in a skillet with just a touch of canola oil and salt and pepper only. I wanted to keep the spices basic, so people could put whatever toppings they wanted.
For the fries, I just cut up the potatoes, added a little oil, salt, pepper, oregano and paprika. I baked them at 375 for about 30 minutes or so.
So for mine, since I was low on buns, I chose to have mine on a pita. I split the pita in half, placed the chicken, 1 slice of swiss cheese, 2 slices of turkey bacon, 1/2 cup of black beans, a handful of broccoli slaw, and bbq sauce
This will be a keeper for sure!
I had a lot of comments on how people were surprised I watched the Real World on MTV. I have a confession to make, I’ve watched every season since it was on, what 20 years so far? So, I’m kind of keeping the streak going!! I think its so funny to see all those strangers get together and see what craziness happens! Are there any other people in their 40’s watching MTV, or am I the only one? Hee Hee!

I’m always getting sucked in to the real world re-run marathons. I don’t even watch the show regularly, but it is SO addictive. I totally understand.
I too am a real world addict. I don’t know why, but they just sick me in. Even the bad seasons & the challenges!

I used to watch it regularly and was VERY serious to auditioning a few years – b/c I agree – it’s cool to see what happens with a mesh of people.
Lately I’ve stopped watching b/c it just seems to be partying! The only activity the roommates partake in is clubbing, drinking, and then passing out, making out w/ ea. other, hot tubbing, etc.
I remember the way, way old seasons and they’d relax around the house, work, etc. and every few episodes would be a drunk-related event. I wish it’d go back to that!!!

You can never have too much chicken on hand. Chicken is so versatile — as you just showed — that you’re always glad to have some around to throw into unexpected recipes.
