I am a huge fan of anything taco related. Nachos, tacos, burritos, I love it all. This delicious lunchtime snack really hit the spot!
Of all the low carb tortillas on the market, Tumaro Wraps are my favorite. They are large, super pliable and taste great. And of course they are low in points, only 1 smart point each – or 60 calories.
The ingredients I used for my burrito:
- 2 oz. cooked taco meat
- 1/8 cup rice
- 1 Tumaro Wrap (I used garden veggie)
- Trader Joe’s Mozzarella (made with almond milk)
- 3 baby bell peppers, chopped
- 1/4 cup dice white onion
Fill the Tumaro wrap and fold like a burrito. Add it to a skillet coated with cooking spray, and start cooking it seam side down. This will make it so it doesn’t break open.
Cook for several minutes until browned on all sides.
This was so filling. The dipping sauce on my plate – Dragon Sauce from Trader Joe’s – definitely add it to your list the next time you go to Trader Joe’s!
