The title is a little long, but I had a lot of good eats today! I ate the last of my carrot muffin I made the other day for breakfast. The other two I brought to work to give to a couple of my friends who are trying to watch their weight too.
This was my lunch today. Similar to yesterday but I added the grapes and some fat free ranch dressing to dip my carrots and pretzels into. It took me the longest time to eat all of this. The good thing about that; I didn’t need an afternoon snack, I was still full! I am trying to have a medium size breakfast (between 200-300 calories) and bigger lunch (500 calories) and 500 calories for dinner. This HUGE lunch was 520 calories!! My lunch consisted of 1 slice double fiber bread, 2 oz. turkey deli meat, .5 ounce of cheese, 1 slice turkey pastrami, 1 ounce pretzels, 3 oz. baby carrots and 175 grams of grapes.
When I got home from work, I had no idea what to make for dinner. My husband was going out with his brother who is in town, so the kids were all in the kitchen talking about what to make, when my son Mark, pulls this baby off the pantry shelf
Remember Jiffy pizza dough! I didn’t even know I had this. He read a recipe on the side for pizza sticks, where you roll out the dough add cheese and pepperoni and then dip it into pizza sauce. I didn’t have the pepperoni, but I did have the cheese, so I made this for my kids with the left over pasta from last night
They turned out pretty good! The cheese started oozing out, but that’s okay! Once they were set and watching American Idol, I wanted to make something really fantastic for myself. I had these in the fridge leftover from making egg rolls last week:
Now, what to put in it. I thought of making kind of a calzone, but decided on making some kind of fun filling. I didn’t have any chicken, but I did have some Italian sausage, black beans, chihuahua cheese, so that’s what I decided to make. If you have more ingredients, you could put corn, brown rice, peppers, whatever you want!
Inside my egg roll wrap was:
2 oz. cooked Italian sausage
1/2 cup black beans
1/4 cup diced onions
a little cumin
a little chili powder
1 oz. chihuahua cheese
In a small skillet, I sauteed the onions until they were soft, added the Italian sausage, the black beans and spices and cooked until the sausage was cooked through.
Taking one egg roll wrap, I laid down .5 ounce slice of the cheese, and half the bean mixture and wrapped it up. I did the same thing with the other egg roll wrap. I brushed egg white over top and baked for about 17 minutes until the tops were browned.
I served it on a bed of greens, with some baby carrots cut up, the 2 egg rolls and a drizzle of fat free ranch dressing. All I can say is, OMG, these were so good!!
Calories for this HUGE plate are 486 calories, 17 grams of fat, 6 grams of fiber and 22 grams of protein!
I love losing weight eating this way!!! In the past I would have a tiny breakfast, a lean cuisine for lunch, 100 calorie pack snacks and granola bars in between meals, or fat free Pringles, followed by a boring salad for dinner. I like this way much better!

I absolutely love your creativity with egg roll and wonton wrappers. They are something I never have on hand, or would think to buy, but you always are doing the coolest things with them! I need to pick up a pack and see what I can come up with, because that last pic is amazing! I cannot believe only 486 calories, either!

I completely forgot about Jiffy Pizza crust. Mom when she was feeling lazy about making pizza dough would buy that stuff. Great memories.

Jiffy actually has a great line of a million baked products. It’s great! We grew up only knowing about corn bread, so it’s cool to see someone using something different. You’ve whipped up a totally filling, healthy dinner. One question…definitely give more info on this chihuahua cheese!
