Simple summer lunch

I love weekends because I can spend more time in the kitchen and try more recipes.  It was a busy weekend, kids sleeping over, one of my kids going to a sleep-over, play dates etc…so by 1:15 today I still hadn’t had lunch, I was trying to think of something easy to make but also low in calories, since I didn’t know what I would be having for dinner.  I had chicken breasts frozen in the freezer, so I took one out and started cooking it in a frying pan with Pam.  I had a Mission Brand lo-carb tortilla, so I took that out, with some red onion and pepper jack cheese.  I cooked the chicken breast and removed it from the pan.  Next, I sauteed some red onions, added the chicken back in(first I cut the chicken up in bit size pieces), with .5 ounce slice of pepper jack cheese, so it all became melty and yummy.  I put all that in my tortilla, threw some fresh spinach on top and salsa and it was the best lunch I have had in a long time.  Plus it was around 270 calories, 5 fat and 13 grams of fiber!

I also had pea pods on the side.  One cup of pea pods is only 26 calories!  I washed them, trimmed the ends off, threw them in a frying pan with a little Pam cooking spray and chopped garlic, and some crushed red pepper flakes.  If you’ve never tried them, they are delicious and great fixed like this, or in a stir fry!
