- I love eating food that is not only high in quality, but high in quantity! I’ve been adding salads to my dinners and it not only makes me feel like I ate a ton of food, it takes a long time to eat and I feel totally satisfied. This plate my daughter is holding has 1 cup of broccoli slaw and 3 cups mixed greens. Do you know how many calories are on that plate? 35 calories! That’s it. Knowing that, you can bulk up any meal if you are running out of calories/points for the day. This was the base of my salad, and this is result of what I made:
- I added 1/2 an apple, 2 strawberries, 10 red grapes, 1 tablespoon of soy nuts, 1 carrot, and a sprinkle of cheese, plus 2 tablespoons Paul Newman’s Lite Balsamic Vinaigrette dressing. It was fantastic and it took me about 1/2 hour to eat. The nice thing about that, is I’m not thinking about taking seconds after my meal is served. Tonight I made sloppy joe’s on a Healthy Life high fiber hamburger bun. It was very good and hearty.
