Pot sticker pillows + Biggest Loser re-cap

I am re-posting this recipe because I love pot stickers so much! I think I could eat these every day and never get tired of them! The best thing about making these is that you can pretty much use up any extra veggies or protein to put in them.

I knew I had egg roll wrappers, ground turkey, edamame, red onion, garlic, and broccoli slaw, so that’s what I decided to put in the wrappers.

You can buy this kind of turkey at Aldi Food Stores. I only used 3 ounces uncooked for the whole recipe!

Veggies!

In a large skillet coated with cooking spray, I added one serving of broccoli slaw (chopped) and 3 ounces of baby carrots, 2 cloves of garlic and 1/4 of a small red onion chopped

A few great things about this: This whole skillet is only 73 calories!! 25 calories for the broccoli slaw and 35 calories for the carrot and 13 calories for the onion!

After the veggies had sauteed a bit, I added 3 ounces of uncooked turkey and cooked it until the turkey was cooked through.

Next I added a few teaspoons of classic stir fry sauce to the veggies

I cut each egg roll wrapper into 4 squares. (Each square is only 20 calories!) Add about 1 TB. of the filling and fold up. It kind of looked like little pillows to me, so that’s what I am calling them!

This is what they looked like before cooking. I added about 1/4 cup of water to the pan, and put a lid on the skillet and steamed the pot stickers for a few minutes until all the water had evaporated. I then sprayed them with more Pam Cooking Spray and 1 tsp. of canola oil.

Cook on medium high heat about 3-4 minutes per side or until golden brown

And serve them with any stir fry sauce you would like.

These turned out so great. Each pot sticker is only 30 calories, so go crazy!!

Biggest Loser Re-cap

I kind of fast forwarded through the work out sessions, sometimes its a little too much yelling for me! BUT, I was so happy that the Brown Team is still going. I kind of figured since James did so well at home, his brother would do well on the ranch.

AND, I think it is so shocking how every season the Dr. has to say “This is the sickest group of people we’ve ever had!” I think a lot of people don’t equate being overweight with getting diseases, but that’s exactly what it can do.

I also thought it was interesting that the heaviest man had NO idea he had gotten over 500 pounds! How do you not realize that?

The Mom looked great on the purple team after going home, it was encouraging that in such a short time she was able to get off so many medications.

What do you think of this season so far? Any favorites standing out for you? I think I am rooting for the twin!
