Muffins!

I’ve wanted to do this post for a while. For those of you who are my regular readers, you know how I LOVE muffins!

When I wasn’t watching what I was eating, I would FREQUENTLY stop by a bakery by my office and get a muffin. Lemon Poppyseed was a favorite, as well as Chocolate Chip.

They were always HUGE and always left a butter stain on my napkin! Upon further review, my muffins I loved were somewhere around the 600-700 calorie mark and as much as 30 grams of fat! I knew there had to be a better way. So once I got serious again about losing weight I knew I could make muffins that I could eat for breakfast, but still stay on track.

Here are a few of my favorites:

Graham Cracker Muffins
Morning Glory Muffins
Lemon Poppy Seed Muffins
Cheerios Banana Chocolate Chip
Jumbo Blueberry Muffins
Cinnamon Chip Muffins
Banana Chocolate Muffins
Zucchini chocolate chip muffins
Coffee Cake Muffin
Banana Bran Muffins
Low Fat Peanut Butter Chocolate Chip

And these are just a few of the muffins I’ve made over the last year and a half. I have 26 different varities!! So, I have NO EXCUSE to stop by the bakery, when I can be just as happy making my own.

If you don’t have one, I would suggest investing in a Jumbo Muffin Pan. You can find them at Target or Walmart and I will frequently make Jumbo muffins so its like getting it from a bakery. If the recipe makes 12, then just double the calories for one and if you make healthy muffins like these, then you can still afford to eat a Jumbo Muffin!
